1 cup granulated sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 1/2 teaspoons cream of tartar*
3/4 teaspoon baking soda ((generous))
1/2 to 3/4 teaspoon kosher salt (to taste)
1/2 teaspoon ground cinnamon
1/4 cup granulated sugar
2 tablespoons clear sparkling sugar (optional)
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F and line baking sheets with parchment paper.
  • In a large mixing bowl with an electric mixer, cream the butter and sugar together on medium-high speed until very pale and fluffy (about 3 minutes).
  • Scrape the bottom and sides of the bowl with a silicone spatula and add the egg, mixing until smooth.
  • Stir in the egg yolk and vanilla until smooth.
  • Add the flour, cornstarch, cream of tartar, baking soda, salt, and cinnamon, and mix on medium-low speed until a dough forms (it might look dry and sandy at first but if you keep mixing it will come together).

1 cup butter, softened
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Mix softened butter, 1 1/2 cups sugar, 1tps of vanilla extract and eggs thoroughly in a large bowl.
  • Combine flour, cream of tartar, baking soda and salt in a separate bowl.
  • Blend dry ingredients into butter mixture.
  • Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
  • Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  • Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
  • Coat by gently rolling balls of dough in the sugar mixture.

1 cup wheat flour
1 3/4 cups all-purpose flour
2 teaspoons cream of tartar
2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons sugar
3 tablespoons cinnamon

Steps:

  • Mix butter, 1 1/2 cups sugar, and eggs in a bowl.
  • In a separate bowl, mix flour, cream of tartar, baking powder, and salt.
  • Mix the two bowls together.
