Provided by Tonsc721

Number Of Ingredients 9

2 cups sugar
1 scant cup water
1 quart fresh cranberries
15 large marshmallows, cut up
1 large package of lemon jello
1 cup cold water
1 cup nuts, chopped
1 cup apple, chopped
1 cup celery, chopped

Steps:

  • Boil the first three ingredients together for 5 minutes. Add the marshmallows and the jello. Stir until the marshmallows have dissolved. Let it cool. When it is cool, add the cup of cold water, nuts, apples and celery. Pour into a 9" square dish and refrigerate until solid and ready to serve. (I usually make this in a clear, square glass dish because it looks pretty from the sides. I serve it cut into small squares because it seems nicer to me than a big glop from a spoon.)

Tips:

  • Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they may not be as tart.
  • Chop the walnuts finely so that they distribute evenly throughout the salad.
  • Use a light-colored gelatin so that the salad retains its bright red color.
  • Chill the salad for at least 4 hours, or overnight, before serving. This will allow the flavors to meld and the gelatin to set.
