SAUERKRAUT SOUP II

Sauerkraut Soup II image

This is a wonderful recipe I learned while in college. Serve with a nice crusty bread. You can make this on the stove or in a slow cooker, whichever one fits your lifestyle. Just make sure you have a 4 quart size slow cooker. Note: to make this soup less fattening omit the cream of chicken soup and one of the cans of water.

TANGY SWEET & SOUR CABBAGE SOUP

Tangy Sweet & Sour Cabbage Soup image

A family favorite, I took bits and pieces from several recipes and tweaked it to our preferences. The first time I made this, I used the juice of 2 lemons, which was not enough, and probably 1 cup of brown sugar or a bit more, which was about right. In addition to the lemon juice, I added a bit of cider vinegar as well - the soup needed more of a sour taste. Turned out great!

Time 3h

Yield 10 serving(s)

Number Of Ingredients 16

3 lbs chuck steaks or 3 lbs beef short ribs
1 onion, chopped
3 parsnips, peeled and diced
3 carrots, peeled and diced
1 -2 stalk celery, diced
28 ounces stewed tomatoes
3 (10 3/4 ounce) cans condensed beef consomme
1 cabbage, coarsely shredded
14 ounces sauerkraut, drained
2 -3 lemons, juiced
2/3 cup brown sugar (or more)
salt, to taste
pepper, to taste
garlic powder, to taste
1 -2 tablespoon olive oil
water

Steps:

  • In a large soup pot or dutch oven, brown meat on all sides in olive oil under medium high heat. Season the meat with salt, pepper, or your favorite spices while cooking. When browned all over, remove the meat to a separate plate.
  • Add the onion, parsnips, carrots and celery to the pot, plus a little more oil (if needed to prevent sticking). Cook over medium heat, stirring often, until browned and softened.
  • Add in the can of stewed tomatoes, cutting up the large slices of tomatoes into smaller pieces.
  • Add in the cans of beef consomme and 3 cans of water. You can also use beef broth or French onion soup as well.
  • Place the meat back into the pot. Bring to a boil over high heat, then reduce heat to low, cover and simmer for one hour.
  • After one hour, add the cabbage and sauerkraut to the pot. Again, bring to a boil, cover, and simmer on low heat for another hour.
  • After another hour has gone by, add the juice of 2 or 3 lemons to the soup and the brown sugar. You may need more of each to taste, the soup should definitely be sweet, and sour.
  • Enjoy!

Yield Makes 10 servings

Number Of Ingredients 10

1 large onion, halved lengthwise and thinly sliced crosswise (2 cups)
2 large garlic cloves, finely chopped
3 tablespoons vegetable oil
1 teaspoon cumin seeds, toasted
10 whole allspice, crushed
1 (28-ounce) can whole tomatoes in juice
1/2 cup packed dark brown sugar
1 1/2 teaspoons salt
1/4 teaspoon black pepper
3 pound packaged sauerkraut, rinsed well and drained

Steps:

  • Cook onion and garlic in oil in a 3 1/2- to 4-quart heavy saucepan over moderately low heat, stirring occasionally (stir more frequently toward end of cooking), until golden brown, about 30 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring, 30 seconds. Add tomatoes (including juice), brown sugar, salt, and pepper and simmer, stirring occasionally and breaking up tomatoes, 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, partially covered, stirring occasionally, until most of liquid is absorbed, about 30 minutes.

Tips:

  • Use a variety of vegetables: The more vegetables you use, the more flavor and nutrition your soup will have. Some good options include cabbage, carrots, celery, onions, and peppers.
  • Don't overcook the vegetables: You want the vegetables to be tender, but not mushy. Cook them until they are just starting to soften.
  • Use a good quality sauerkraut: The sauerkraut is the key ingredient in this soup, so it's important to use a good one. Look for sauerkraut that is made with fresh cabbage and has a tangy flavor.
  • Add some sweetness: The sweetness of the apples and pineapple helps to balance out the tanginess of the sauerkraut. You can also add a little bit of honey or maple syrup if you like.
  • Serve with a side of bread or crackers: This soup is delicious served with a side of bread or crackers. It's also a great meal to serve with a salad.

Conclusion:

Sweet and sour sauerkraut soup is a delicious and easy-to-make soup that is perfect for a cold winter day. It's also a great way to use up leftover sauerkraut. The combination of sweet and sour flavors is sure to please everyone at your table.
