Time 30m

Yield 6 servings

Number Of Ingredients 14

2 tablespoons extra-virgin olive oil
1 large onion, diced
Pinch of saffron or 1/2 teaspoon turmeric
1 large or 2 small cauliflowers, trimmed, cut into large florets, florets sliced 1/4-inch thick (about 1 1/2 pounds)
Salt and pepper
1/4 cup light brown sugar
1/4 cup currants
1/2 cup golden raisins
1/2 teaspoon freshly grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 tablespoons apple cider vinegar
1 to 2 tablespoons sherry vinegar, to taste
1 tablespoon snipped chives
2 tablespoons pine nuts, lightly toasted

Steps:

  • In a large, heavy pot, warm olive oil over medium-high heat until hot but not smoking. Add onions and cook, stirring, until softened and just turning golden, 5 to 8 minutes. Adjust the heat to prevent browning. Add saffron and stir to coat.
  • Add cauliflower, season generously with salt and pepper and cook for 2 to 3 minutes, uncovered, stirring frequently.
  • Add brown sugar, currants, raisins, lemon zest and juice, cider vinegar and 1 tablespoon sherry vinegar. Turn up heat and cook, stirring occasionally, until cauliflower is just tender, about 5 to 8 minutes more.
  • Remove pot from heat, taste and adjust the seasonings with salt and sherry vinegar. Set aside for at least 10 minutes (or up to 2 days, refrigerated) before serving.
  • When ready to serve, transfer to a serving dish and sprinkle with chives and pine nuts. Serve hot or at room temperature.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is compact and heavy for its size. Avoid heads that have brown or yellow spots, as these are signs of bruising or age.
  • Cut the cauliflower into florets: To do this, simply remove the leaves from the cauliflower and cut the head into small pieces. You can also use a food processor to chop the cauliflower into florets.
  • Blanch the cauliflower: Blanching is a process of briefly boiling the cauliflower in salted water. This helps to soften the cauliflower and make it more tender. To blanch the cauliflower, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 2-3 minutes, or until they are tender but still slightly crunchy. Drain the cauliflower and immediately transfer it to a bowl of ice water to stop the cooking process.
  • Make the sweet and sour sauce: There are many different recipes for sweet and sour sauce, but they all typically contain some combination of vinegar, sugar, soy sauce, and ketchup. You can also add other ingredients, such as pineapple, ginger, or garlic, to taste.
  • Coat the cauliflower in the sauce: Once the sweet and sour sauce is made, add the blanched cauliflower florets to the sauce and stir to coat. You can also add other vegetables, such as bell peppers, onions, or carrots, to the sauce.
  • Cook the cauliflower: The cauliflower can be cooked in a variety of ways, such as stir-frying, deep-frying, or baking. If you are stir-frying the cauliflower, heat a large skillet over medium-high heat and add the cauliflower and sauce. Stir-fry for 5-7 minutes, or until the cauliflower is heated through and the sauce is thickened.

Conclusion:

Sweet and sour cauliflower is a delicious and easy-to-make dish that can be enjoyed as an appetizer, side dish, or main course. It is a great way to get your daily dose of vegetables, and it is also a good source of vitamins and minerals. With a little planning and preparation, you can make a delicious and healthy sweet and sour cauliflower dish that your family and friends will love.
