Yield 4 servings

Number Of Ingredients 23

1 pound lean pork
1 tablespoon soy sauce
1 tablespoon sweet vermouth
1 teaspoon minced garlic
1 teaspoon minced ginger
4 tablespoons oil, divided, plus 4 cups oil, for deep frying
1/2 cup cornstarch
1/2 cup diced red and yellow bell peppers
2 tablespoons diced onion
Strips of green onion, for garnish
Toasted sesame seeds, for garnish
1/2 cup ketchup
1/2 cup vinegar
1/2 cup water
2 teaspoons soy sauce
1 cup sugar
1/4 cup orange marmalade
1 1/2 teaspoons minced ginger
1 teaspoon minced garlic
1/4 teaspoon hot pepper sauce
2 tablespoons pineapple juice
1/2 cup chopped canned pineapple
4 tablespoons cornstarch mixed with 3 tablespoons water, for thickening

Steps:

  • Cut pork into bite-size pieces and marinate for 30 minutes in mixture of soy, vermouth, garlic, ginger, and 2 tablespoons oil. Set aside.
  • Meanwhile, make the sweet and sour sauce:
  • In a medium saucepan, combine all ingredients except the cornstarch mixture, blend well and bring to a boil. Add cornstarch mixture. Reduce heat and simmer, stirring frequently until thickened. Be sure and bring your sauce to a boil before adding the cornstarch, otherwise the sauce may retain an unpleasant starchy taste.
  • Heat oil in a Dutch oven to 350 degrees F.
  • Remove pork pieces from marinade and roll in cornstarch to coat well. Deep fry in hot oil until golden brown and crispy.
  • In a large saute pan, heat 2 tablespoons oil on medium-high heat. Stir-fry red and yellow pepper and diced onion for 2 minutes, then add sweet and sour sauce and fold in fried pork. Let simmer for 2 minutes, arrange on serving platter and garnish with long strips of green onion and toasted sesame seeds.

Yield Serves 4 to 6

Number Of Ingredients 13

2 tablespoons red-wine vinegar
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1 tablespoon dried hot red pepper flakes
1/4 cup vegetable oil
1 1/2 pounds boneless trimmed pork shoulder or pork loin, cut into forty 1-inch pieces
1/4 cup ketchup
2 tablespoons distilled vinegar
2 tablespoons sugar
2 teaspoons soy sauce
1/2 teaspoon salt
1/4 teaspoon Oriental sesame oil
a 4-pound pineapple, peeled, cored, and cut into thirty 3/4-inch-thick wedges
ten 10-inch wooden skewers, soaked in water for 30 minutes

Steps:

  • In a large bowl whisk together the red-wine vinegar, the garlic paste, and the red pepper flakes, add the vegetable oil in a stream, whisking, and whisk the marinade until it is emulsified. Add the pork, stirring to coat it with the marinade, and let it marinate, covered and chilled, for at least 6 hours or overnight.
  • In a bowl whisk together the ketchup, the distilled vinegar, the sugar, the soy sauce, the salt, and the sesame oil until the sugar is dissolved and reserve the sauce.
  • Drain the pork, reserving the marinade, and thread it and the pineapple, alternating them, onto the skewers, using 4 pieces of pork and 3 pieces of pineapple on each skewer. Brush the kebabs with some of the reserved marinade and grill them on a rack set 5 to 6 inches over glowing coals, basting them for the first 10 minutes with the reserved marinade and turning them, for 20 to 25 minutes, or until the pork is just cooked through but still juicy. Brush the kebabs with the reserved sweet-and sour sauce and grill them, turning them, for 2 minutes more. (Discard any remaining marinade; do not serve it as an accompaniment.)

  • Serve with cooked rice.

Tips:

  • Choose the right cut of pork: Pork shoulder or loin are both good choices for this recipe, as they are flavorful and relatively inexpensive.
  • Use a sharp knife to cut the pork into thin strips: This will help the pork cook evenly and quickly.
  • Marinate the pork in a mixture of soy sauce, rice wine, and cornstarch for at least 30 minutes: This will help to tenderize the pork and give it a delicious flavor.
  • Use a large skillet or wok to cook the pork: This will give the pork plenty of room to brown and prevent it from sticking.
  • Cook the pork over medium-high heat until it is browned on all sides: This will help to seal in the juices and prevent the pork from becoming dry.
  • Add the pineapple chunks and bell peppers to the skillet and cook until they are tender: This will add sweetness, crunch, and color to the dish.
  • Make the sauce by combining ketchup, brown sugar, vinegar, and soy sauce in a small bowl: Bring the sauce to a simmer and cook until it is thickened.
  • Pour the sauce over the pork and vegetables and cook until the pork is cooked through: This will allow the flavors of the sauce to meld together and create a delicious dish.
