ZESTY VEGETARIAN SWEET AND SOUR MEATBALLS
These meatballs use pecan meal as a meat replacement. They are so good, you don't even miss the meat! This recipe does have eggs and cheese in it, so it is not quite vegan. But those items can be substituted to make it so. The ingredients may sound funny, but the result is amazing! The sauce is very zesty so if you don't want it to be too strong cut down on the vinegar some.

Tips:
- Use firm tofu: Extra firm or firm tofu is best for making vegetarian meatballs. Soft or silken tofu will not hold its shape as well.
- Press the tofu: Pressing the tofu before using removes excess water and helps the meatballs hold together better. To press the tofu, wrap it in a few layers of paper towels and place a heavy object on top for 30 minutes.
- Season the tofu well: Don't be afraid to season the tofu well. You can use a variety of spices and herbs, such as garlic powder, onion powder, paprika, cumin, and chili powder.
- Use a food processor to grind the tofu: This will help to create a smooth and even texture for the meatballs.
- Don't overmix the meatballs: Overmixing can make the meatballs tough. Mix just until the ingredients are combined.
- Cook the meatballs over medium heat: This will help to prevent them from burning.
- Serve the meatballs with your favorite sauce: The sweet and sour sauce is a classic choice, but you can also try marinara sauce, teriyaki sauce, or even just a simple glaze.
Conclusion:
These sweet and sour vegetarian meatballs are a delicious and easy-to-make dish that is perfect for a weeknight meal. They are packed with flavor and can be served with a variety of sides, such as rice, noodles, or vegetables. So next time you're looking for a meatless meal, give these meatballs a try.
