This Thai Coconut Curry is to die for! Shrimp plus spinach, red bell peppers, and all sorts of other yummy ingredients will have you shouting from the rooftops that you found the most perfect, easy, tasty Thai dish ever.

1 pound medium or large shrimp (peeled and deveined)
2 large carrots (peeled and sliced into 1/2 inch chunks)
1 red bell pepper (diced)
1 teaspoon minced garlic
¼ teaspoon cayenne pepper (or to taste)
salt to taste
3 cups baby spinach leaves
fresh basil, cilantro, or green onions for garnish
2 tablespoons vegetable oil
½ yellow onion (finely chopped)
2 teaspoons fresh ginger (OR 1 teaspoon ground ginger)
½ teaspoon ground turmeric
1 tablespoon thai red curry paste
1 tablespoon sugar
1 15-ounce can coconut milk
2 tablespoons fish sauce
grated zest and juice of one lime
cooked noodles or rice for serving (optional)

Steps:

  • Make the sauce: Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the onion and cook 5 minutes, or until softened.
  • Add the ginger, turmeric, curry paste and sugar and stir until fragrant, about 15 seconds. Pour in the coconut milk and fish sauce. Bring to a simmer, then lower heat and cook 10 minutes to thicken slightly. Remove from the heat, stir in the lime zest and juice. Cover to keep warm.
  • Prepare the shrimp: Heat the remaining tablespoon oil in a large (12-inch) skillet over medium-heat. Add the carrots and stir to coat with the oil. Lower the heat, cover the pan and cook the carrots 5 minutes, until tender.
  • Turn up the heat to medium-high and add the red bell pepper, shrimp, garlic, cayenne and salt to taste. Cook until the shrimp are no longer pink, 2-3 minutes per side.
  • Add the spinach and curry sauce to the shrimp and stir until the spinach is wilted. Sprinkle with green onion and cilantro (or basil) and serve.

3/4 cup minced onion
4 large garlic cloves, minced
1/4 cup Thai red curry paste
1/4 cup vegetable oil
2 1/4 cups well-stirred unsweetened coconut milk (from 2 cans)
3 tablespoons lime juice
1 1/2 tablespoons Asian fish sauce
1 1/2 teaspoons sugar
1/4 to 1/2 teaspoon cayenne
1/2 cup chopped cilantro sprigs (optional)

Steps:

  • Cook onion, garlic, curry paste, and 1/4 teaspoon salt in oil in a wide 2-quart heavy saucepan over medium-low heat, stirring frequently, until onion is softened, 6 to 8 minutes.
  • Add coconut milk and gently simmer, stirring frequently, until reduced to 2 cups, 20 to 30 minutes.
  • Remove from heat and stir in lime juice, fish sauce, sugar, cayenne, cilantro (if desired), and salt to taste.

1/2 cup soy sauce
1/2 cup sugar
1/4 cup rice wine vinegar (white vinegar is fine)
1 Tbsp fresh grated ginger
4-6 cloves minced garlic
2 tsp of sesame oil (if heating the sauce add this at the end as heat will make this flavor weaker)
This is my basic teriyaki sauce for any marinating of meats to be stir fried later. Marinate for at least 2 hours but overnight is best.
Now to spice it up......
1/2 cup mirin (japanese sweetened sake)
zest and juice from 2 limes
3/4 cup of sweetened coconut flakes
4 oz. green curry paste

Steps:

  • I like to use a hand blender at the start of this sauce to get everything blended well. Put all ingredients but the coconut in a food processor or use a hand blender until the sugar is completely dissolved. Add coconut at the end stirring in to keep flakes intact. If you are going to cook with this sauce add the sesame oil just before serving to get the best flavor from it.

1 1/2 tablespoons Thai red curry paste
1/4 cup vegetable oil
4 lbs chicken thighs (skin removed on thighs)
1 cup light coconut milk (unsweetened)
1 1/2 tablespoons fish sauce (asian)
3 tablespoons dark brown sugar
1 teaspoon peppercorn (Thai peppercorns, if you can't find them leave them out)
salt & freshly ground black pepper
1 lime (cut into wedges)
cilantro (for serving)

Steps:

  • 1. Preheat the oven to 450 and postion a rack near the top. In a large bowl, whisk 1/2 tsp of the red curry paste with the oil. Add the chicken, season with salt and pepper and toss to coat. Spread the chicken on a large rimmed baking sheet and bake for about 25-30 minutes, turning once, until cooked through and just starting to brown. Remove from the oven; preheat the broiler.
  • 2. While chicken is browning, in a medium saucepan, combine the coconut milk, fish sauce, brown sugar and the remaining red curry paste. Cook over high heat, bring to a boil for about 4 minutes and then cook over high heat stirring occassionally until slightly thickened.
  • 3. Transfer the chicken to a large bowl. Add the coconut-curry sauce and toss to coat. Pour off any excess fat from the baking sheet. Return the chicken to the sheet and pour any extra sauce over the chicken. Broil for 5 minutes, turning once (should be browned). Transfer to a platter and serve with cilantro and lime wedges.

2 cups chicken broth
1/2 cup coconut milk

1 teaspoon fish sauce

Steps:
