1 3/4 cups water
1 1/4 cups jasmine rice, rinsed well, drained, or long-grain white rice
1/2 teaspoon salt
1/2 cup shelled fresh or frozen peas
2 tablespoons extra-virgin olive oil
6 green onions, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon grated lemon peel

Steps:

  • Combine 1 3/4 cups water, rice, and salt in large saucepan. Bring to boil over high heat. Reduce heat to low; cover and cook until rice is tender, about 15 minutes. Remove from heat. Let stand covered 15 minutes. Fluff with fork. Cool.
  • Cook peas in medium saucepan of boiling salted water 1 minute. Drain. Rinse under cold water. Drain.
  • Heat oil in large nonstick skillet over medium-high heat. Add all but 2 tablespoons green onions; sauté 30 seconds. Add rice and sauté until heated through, stirring to break pieces, about 4 minutes. Add peas, lemon juice, parsley, and lemon peel. Sauté 2 minutes to blend flavors. Transfer to serving bowl. Sprinkle with remaining green onions.

1/2 teaspoon salt
1 tablespoon peanut oil or 1 tablespoon vegetable oil
1 1/2 cups onions, cut into thin half moons
2 garlic cloves, minced
2 tablespoons brown sugar
1/4 teaspoon salt (if needed)
2 teaspoons chili paste (Sambal Oelek)
2 tablespoons rice vinegar
1 tablespoon fresh cilantro, minced
1/2 cup peanuts or 1/2 cup cashews, coarsely chopped and toasted

Steps:

  • Cook rice per package instructions using 1 3/4 cups water and 1/2 teaspoon salt; keep warm.

1 cup jasmine rice
1/2 teaspoon salt, divided
1 tablespoon peanut oil
2 cups chopped green onions, cut into 1/2-inch slices
2 garlic cloves, minced
1/2-1 teaspoon sambal oelek (depending on how spicy you want it)
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons sugar
1/2 cup coarsely chopped roasted peanuts, salted, coarsely chopped or 1/2 cup coarsely chopped roasted cashews, coarsely chopped

Steps:

  • If necessary, lightly roasted the peanuts and coarsely chop. You want the peanuts coarsely chopped, not ground!
  • Place the water, jasmine rice and 1/4 teaspoon salt in a rice cooker and cook. Once done, keep warm.
  • In a saute pan, heat up the peanut oil on medium-low heat and saute the green onions, garlic and sambal oelek for about 2-3 minutes or just until softened. Stir occasionally.
