SPICY MANGO SAUCE

Spicy Mango Sauce image

Do not use a blender or a food processor to mince your mango in this recipe. There is more damage done to the cellular structure in a blender, which can create a noticeably different taste and texture. I'll always believe my spicy mango sauce tastes better because I cut it by hand.

Number Of Ingredients 17

1 tablespoon extra-virgin olive oil, plus some for drizzling
1 medium red onion, chopped
1 small red pepper, seeded and chopped
2 mangos, peeled and chopped
Salt and freshly ground black pepper
1/4 cup tamari sauce
2 tablespoons Worcestershire sauce
1 (1-inch) piece ginger root, peeled
1 orange, zested and juiced
1 lime, zested and juiced
1/4 cup honey
1 cup chicken stock
Hot sauce, a tablespoon or so
4 pieces boneless skinless chicken breasts or thighs
4 loin lamb chops
1 cup chopped arugula or frisee or mixed baby greens
Handful basil or tarragon leaves, shredded or torn

Steps:

  • Heat 1 tablespoon extra-virgin olive oil in a sauce pot or grill pan over medium-high heat. Add onions, peppers and saute to soften 3 to 4 minutes, then add mango and season with salt and pepper. Stir in soy sauce, Worcestershire, ginger, a little zest of citrus fruits, honey, stock and hot sauce. Cook the sauce for 10 minutes, add the orange and lime juice and cook for 2 minutes more, to thicken. Remove the ginger chunk.
  • Heat a grill pan over medium-high heat. Coat the meats with a drizzle of olive oil and season with salt and pepper. Grill the chicken breasts 12 minutes turning once and the lamb a couple of minutes on each side for pink centers. Plate the meats on a serving platter, top with sauce and garnish with spicy-sweet greens and herbs.

Tips for Making Sweet Chunky Mango Sauce:

1. Choosing the right mangoes: Opt for ripe, juicy mangoes with a sweet flavor. Avoid mangoes that are too hard or have a sour taste. 2. Peeling and cutting the mangoes: Use a sharp knife to peel the mangoes and remove the cheeks. Slice the cheeks into small pieces for a chunky sauce. 3. Sautéing the ingredients: Heat oil or butter in a pan and sauté the onions and garlic until softened. This adds a savory base to the sauce. 4. Adding the mangoes: Once the onions and garlic are softened, add the mango pieces and cook until they start to soften and release their natural juices. 5. Adding the spices and seasonings: Experiment with various spices and seasonings to create a flavorful sauce. Common choices include ginger, chili powder, cumin, coriander, turmeric, and garam masala. 6. Adjusting the sweetness and acidity: Balance the sweetness of the mangoes with sour ingredients like lime juice or vinegar. Add sugar or honey to taste if desired. 7. Thickening the sauce: If you prefer a thicker sauce, use a cornstarch or flour slurry. Mix a small amount of cornstarch or flour with water and add it to the sauce while stirring constantly. Bring to a simmer until the sauce reaches your desired consistency. 8. Serving suggestions: Serve the sweet chunky mango sauce as a condiment with grilled or roasted chicken, fish, or tofu. It also pairs well with rice, quinoa, or roasted vegetables.

Conclusion:

With its vibrant color, sweet and tangy flavor, and versatility, sweet chunky mango sauce is a delightful addition to various dishes. Experiment with different spices and ingredients to create a sauce that complements your favorite recipes. Whether you serve it as a dip, drizzle it over grilled meats, or use it as a marinade, this sauce is sure to tantalize your taste buds and add a tropical flair to your meals.
