1 sweet onion, sliced thin
1 cup sweet yellow corn, fresh or frozen, cooked and cut off the cob
2 to 4 zucchinis, sliced thin
1 handful fresh basil, chopped
8 to12 ounces Cheddar or Parmesan cheese
3 eggs beaten
Salt, to taste
Pepper, to taste

Steps:

  • Preheat oven to 375°F. In a deep pan cook the onions, zucchini & corn about 15 minutes until soft. Remove from heat add basil, stir, cheeses, stir and egg. Stir to combine and transfer to casserole dish. Bake covered 25 minutes, uncover and bake 10 more minutes. Let stand 15 to 20 minutes before serving. Tip: Slice the zucchini and place on paper towels on a cookie sheet and refrigerate for about an hour first. The water will absorb so your casserole is not runny

Tips:

  • Use fresh or frozen corn. Fresh corn is best, but frozen corn is a good option when fresh corn is not available. If using frozen corn, thaw it before using.
  • Drain the corn well. Before adding the corn to the casserole, be sure to drain it well. This will help to prevent the casserole from being too watery.
  • Use a variety of cheeses. Cheddar cheese is a classic choice for corn casserole, but you can also use other types of cheese, such as Parmesan, mozzarella, or pepper Jack. Using a variety of cheeses will give the casserole a more complex flavor.
  • Add some vegetables. Vegetables such as diced onions, bell peppers, or zucchini can add flavor and texture to the casserole. You can also add a can of drained and rinsed black beans or corn kernels for a pop of color and protein.
  • Season the casserole well. Be sure to season the casserole with salt and pepper, and you can also add other spices, such as garlic powder, onion powder, or paprika. Seasoning the casserole will help to bring out the flavors of the other ingredients.
  • Bake the casserole until it is golden brown and bubbly. The casserole is done baking when it is golden brown and bubbly around the edges. This usually takes about 30-35 minutes.

Conclusion:

Corn casserole is a delicious and versatile dish that can be served as a side dish or a main course. It is a great way to use up leftover corn, and it is also a popular dish to serve at potlucks and holiday gatherings.
