ASIAN NOODLE BOWL

1/4 cup barbecue sauce
2 tablespoons hoisin sauce
1 tablespoon peanut butter
1/8 teaspoon ground red pepper (cayenne), if desired
1 tablespoon vegetable oil
1 small onion, cut into thin wedges
1/4 cup chopped red bell pepper
2 cups fresh broccoli flowerets or 1 bag (14 ounces) frozen broccoli flowerets, thawed
3/4 cup water
1 package (10 ounces) Chinese curly noodles
1 can (14 ounces) baby corn nuggets, drained
1/4 cup chopped peanuts

Steps:

  • Mix barbecue sauce, hoisin sauce, peanut butter and ground red pepper; set aside.
  • Heat oil in 12-inch skillet over medium heat 1 to 2 minutes. Cook onion and bell pepper in oil 2 minutes, stirring frequently. Stir in broccoli and water. Cover and cook 4 to 6 minutes, stirring occasionally, until broccoli is crisp-tender.
  • While vegetables are cooking, fill 4-quart Dutch oven about half full with water. Add 1/2 teaspoon salt if desired. Cover and heat to a rapid boil over high heat. Add noodles; heat to boiling. Boil uncovered 4 to 5 minutes, stirring frequently, until noodles are tender.
  • Stir corn and sauce mixture into vegetable mixture. Cook uncovered 3 to 4 minutes, stirring occasionally, until mixture is hot and bubbly.
  • Drain noodles; place in individual bowls and top with vegetable mixture. Sprinkle with peanuts.

I often serve this as a side dish to my Asian dinners. I sometimes vary it and add chicken or shrimp for a one dish meal. It's very tasty and my family loves it.

4 1/2 ounces dried rice noodles
2 tablespoons peanut oil
1 teaspoon fresh ginger, grated (I cheat and use ginger paste)
1 garlic clove, crushed
4 1/2 ounces bamboo shoots, drained and sliced into batons
4 1/2 ounces bean sprouts
2 medium carrots, sliced into batons
1 small white cabbage, shredded
2 tablespoons Thai fish sauce
2 tablespoons soy sauce (I use more to season when I'm about to serve)
2 tablespoons plum sauce
chili paste (I use Sriracha)
2 teaspoons sesame oil
1 tablespoon light brown sugar
1 lime, juice of
1 lime, rind of
3 1/2 ounces daikon radishes, sliced into thin batons
1/4 cup coriander, roughly chopped
2 tablespoons sesame seeds, toasted

Steps:

  • Cook the noodles in large pot of boiling water, following instructions on the packet.
  • Heat the oil in a wok or very large pan and stir fry the ginger and garlic for 2 to 3 minutes over medium heat until golden.
  • Drain the noodles and set them aside add the bamboo shoots to the wok, increase the heat to high and stir fry for a further 5 minutes.
  • stir in the sauces, sesame oil, sugar and lime juice.
  • Add the daikon and coriander, toss to mix sprinkle with sesame seeds and serve.
  • Sometimes I add a little bit of sweet chili sauce when I want it sweeter or for another variation you can add chicken or shrimp for a full meal.

8 ounces thick rice noodles
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 tablespoon sesame oil
1 can (8 ounces) sliced water chestnuts, drained
1 can (8 ounces) whole baby corn, drained
1 cup frozen peas
1/8 teaspoon salt
1/8 teaspoon dried basil
1/8 teaspoon pepper
1 cup Thai peanut sauce, divided

Steps:

  • Cook noodles according to package directions., Meanwhile, in a large skillet, cook chicken in oil over medium heat for 10-15 minutes or until juices run clear. Add the water chestnuts, corn, peas, salt, basil and pepper; heat through. Stir in 1/4 cup peanut sauce. Remove from the heat and keep warm., Drain noodles; divide among four soup bowls. Drizzle each with 2 tablespoons peanut sauce and toss to coat. Top with chicken mixture. Drizzle with remaining peanut sauce.
