  • Preheat oven to 400°. In a large skillet, heat oil over medium heat. Add onions; cook and stir until softened, 8-10 minutes. 6 tablespoons butter, softened
2 cups thinly sliced sweet onions
2 cloves garlic, minced
1 tablespoon minced fresh chives
¾ cup whole milk
2 eggs
½ teaspoon salt
¾ cup shredded Cheddar cheese
1 pinch paprika
1 tablespoon chopped fresh parsley

  • Preheat oven to 350 degrees F (175 degrees C).

1 package (8-1/2 ounces) cornbread/muffin mix

1/4 teaspoon dill weed

Half a 1-pound pineapple, cored and finely chopped (juice reserved)
1 cup firmly packed brown sugar
1/2 cup golden raisins
2 tablespoons lemon juice
1 small cinnamon stick
1/4 cup (4 tablespoons) unsalted butter, melted
1 cup plain white cornmeal
3/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1 cup boiling water
1 cup whole milk
2 large eggs

  • Make the jam. Combine the pineapple, any pineapple juice, brown sugar, raisins, lemon juice, cinnamon stick and 1/3 cup water in a medium saucepan.
