SWEET POTATO AND CHICKPEA CURRY

Sweet Potato and Chickpea Curry image

This is a warming rather than hot curry. You can taste the spices and enjoy their aromatic fullness. The ginger, chile and pepper flakes provide heat, while the coriander and cumin add a pleasurable earthiness. Meanwhile, the sweetness of the coconut milk, heightened by the soothing starchiness of the sweet potatoes, has as a counterpoint the fierce tang of tamarind. As a side dish, this recipe would be fine without the chickpeas, but as a meal, along with rice and maybe some steamed broccolini, they add heft and, if you're interested, protein.

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 20

2 medium red onions, peeled
1 clove garlic, peeled
1 bird's eye pepper, Thai chili or other very hot small pepper with its seeds
1 2 1/2- to-3-inch piece of ginger, peeled and cut into chunks
3 tablespoons canola oil
1/2 teaspoon hot red pepper flakes
1/2 teaspoon ground ginger
1 teaspoon ground coriander
1 teaspoon ground cumin
1 1/2 teaspoons ground turmeric
3 cardamom pods, lightly crushed
Salt
2 pounds (about 3 medium) orange-fleshed sweet potatoes, peeled and cut into 1/2- to-1-inch cubes
1 3/4 cups coconut milk
1 tablespoon tamarind paste
2 1/4 cups hot chicken or vegetable broth
4 to 5 cups (about 4 15 1/2-ounce cans, drained) canned or cooked chickpeas (garbanzo beans)
2 tablespoons chopped cilantro leaves
Cooked white rice for serving (optional)
Steamed broccolini for serving (optional)

Steps:

  • In a food processor, combine onions, garlic, hot pepper and ginger. Pulse until finely chopped. Place oil in a large saute pan over medium-low heat. Add chopped onion mixture and sauté until softened, about 5 minutes.
  • Add hot pepper flakes, ground ginger, ground coriander, cumin, turmeric, cardamom pods and 1/2 teaspoon salt. Stir to mix. Add sweet potatoes and stir until well covered in spices. Stir in the coconut milk.
  • Dissolve tamarind paste in hot broth and add to pan. Bring to a boil, then reduce heat and simmer, partially covered, until sweet potatoes are just tender, about 25 minutes. (Taste potatoes to be sure they are cooked all the way through, and allow additional cooking time if necessary.)
  • Add chickpeas and simmer until heated through, about 5 minutes. Adjust salt to taste. Transfer to a warmed bowl and sprinkle with chopped cilantro. Serve, if desired, with white rice and broccolini.

2 large sweet potatoes, peeled and diced (about 2 lbs)
1 (14 1/2 ounce) can chickpeas, rinsed and drained

  • Next, add the curry powder, cumin, and cinnamon, and stir to coat the onions evenly with spices.
  • Add tomatoes with their juices, and the chickpeas, stir to combine.
  • Add ½ cup water and raise heat up to a strong simmer for about a minute or two.
  • Next, add the fresh spinach, a couple handfuls at a time, stirring to coat with cooking liquid.
  • When all the spinach is added to the pan, cover and simmer until just wilted, about 3 minutes.
  • Add the cooked sweet potatoes to the liquid, and stir to coat.
  • Simmer for another 3-5 minutes, or until flavors are well combined.
  • Transfer to serving dish, toss with fresh cilantro, and serve hot.
  • This dish is nice served over basmati or brown rice.

SWEET POTATO AND CHICKPEA CURRY

Sweet Potato and Chickpea Curry image

Recipe of the week in "The Week" magazine (heehee). Originally from the NY Times. Easy to make (e.g., some of the hard-to-cut vegetables are processed in a blender or food processor, and don't be put off by the no. of ingredients; they are mostly dried spices) and also ideal as a leftover served atop a thick piece of sourdough toast as per Nigella Lawson. Update - I made this the other night, and it was very tasty with lite coconut milk. I plan to make this again soon:D

Steps:

  • Peel, chop and steam/boil the sweet potatoes until tender.
  • While the sweet potatoes are cooking sauté the onions in the vegetable oil. When the onions are soft add the spices and stir.
  • Add the tomatoes and chick peas and stir in. Add the water and simmer for several minutes.
  • Roughly chop the spinach and add in a handful at a time. When the spinach has wilted add the sweet potatoes and simmer for 15 minutes. Serve with basmati rice

Tips:

  • To save time, use pre-cooked chickpeas or canned chickpeas. If using dried chickpeas, soak them overnight before cooking.
  • For a creamier curry, use coconut milk instead of water. You can also add a tablespoon of almond butter or cashew butter for extra creaminess.
  • If you like your curry spicy, add a teaspoon or two of curry powder or chili powder. You can also add some chopped jalapeños or serrano peppers.
  • Serve the curry with rice, quinoa, or your favorite grain. You can also serve it with naan bread or roti.
  • To make the curry ahead of time, simply cook the curry according to the recipe and then let it cool completely. Store the curry in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the curry over medium heat until warmed through.

Conclusion:

This sweet potato and chickpea curry is a delicious and healthy meal that's perfect for a weeknight dinner. It's packed with flavor and nutrients, and it's easy to make. So next time you're looking for a quick and easy curry recipe, give this one a try. You won't be disappointed!
