ROASTED BUTTERNUT SQUASH AND SWEET POTATO BISQUE WITH SMOKED APPLEWOOD BACON

Roasted Butternut Squash and Sweet Potato Bisque with Smoked Applewood Bacon image

I tried out for the show 'Master Chef' this past October in New York City. One of my fellow contestants made a pumpkin soup with applewood bacon. He made it to the next round, but sadly I did not. This is my rendition of his soup. I made it my own by using butternut squash and sweet potato and made it richer by turning this into a bisque. I hope you enjoy it as much as I did. Please share your comments. For less-fat option substitute half-and-half with milk or nonfat half-and-half.

Tomato Sweet Potato Bisque with Pesto Grilled Cheese Croutons image

Provided by Carla Hall

Time 1h40m

Yield 4 to 6 servings

Number Of Ingredients 27

1 medium sweet potato
1 tablespoon olive oil
2 medium carrots, roughly chopped
1 rib celery, roughly chopped
1 sweet onion, roughly chopped
1/2 teaspoon kosher salt, plus more as needed
4 cloves garlic, peeled and chopped
2 sprigs fresh thyme
1 bay leaf
One 14.5-ounce can fire-roasted diced tomatoes
1/4 teaspoon cayenne pepper
4 cups unsalted vegetable broth, or more as needed
1/4 cup heavy cream
Freshly ground black pepper
Micro basil, for garnish
Pesto Grilled Cheese Croutons, recipe follows
2 cups packed fresh basil
2 cloves garlic, roughly chopped
1/4 cup pine nuts, toasted
1/4 cup freshly grated Parmigiano-Reggiano
1 teaspoon lemon zest
Pinch kosher salt, plus more as needed
1/4 cup extra-virgin olive oil
Eight 1/2-inch slices bread, cut from a loaf of pain de mie
4 slices sharp or extra-sharp aged Cheddar, thinly sliced
3 tablespoons unsalted butter, softened
3 tablespoons mayonnaise

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sweet potato on a baking sheet and bake until soft, 35 to 40 minutes. Allow to cool, then peel it.
  • Meanwhile, heat a large deep skillet over medium-high heat. Add the olive oil and heat until just hot. Add the carrots, celery, onion and salt. Cook, stirring occasionally, until the onions just turn translucent, about 5 minutes. Add the garlic, thyme and bay leaf and cook, stirring occasionally, until the vegetables are nice and brown, 5 to 7 minutes.
  • Stir in the tomatoes with their juices and cayenne, then stir in the broth. Bring to a boil, then reduce the heat to maintain a steady simmer until the carrots are tender, about 15 minutes. Remove and discard the thyme sprigs and bay leaf. Add the roasted sweet potato.
  • Using a blender, puree the soup until silky smooth. Return the soup to the skillet and heat on low. Stir in the cream. For a thinner soup, stir in more broth. Season to taste and serve hot with the micro basil and Croutons.
  • To the bowl of a food processor, add the basil, garlic, pine nuts, Parmesan, lemon zest and salt. Pulse until the mixture forms a chunky paste, scraping down the sides and bottom of the bowl occasionally. With the machine running, add the olive oil in a steady stream. Keep processing until the desired consistency is reached, pulsing less for a more coarse pesto and more for a smooth one. Season to taste.
  • To make the sandwiches: Spread some pesto on 1 side of 2 slices of bread. Arrange a slice of Cheddar over the pesto on 1 slice of bread. Sandwich with the other slice of the bread, pesto-side down. Repeat with remaining pesto, bread and Cheddar.
  • Mix the butter and mayo together in a small bowl. Spread a generous layer on both sides of each sandwich.
  • Place the sandwich in a nonstick skillet and turn the heat to medium-low. Cook, turning occasionally, until the bread is nice and toasty and golden brown, the cheese is melty and the sandwich is heated through. Repeat with the remaining sandwiches. Cut into croutons.

SWEET POTATO, CORN AND JALAPENO BISQUE

Sweet Potato, Corn and Jalapeno Bisque image

This recipe was published in the New York Times today. It's a New Orleans recipe that was salvaged from Hurricane Katrina, originally published in the Times-Picayune. It was Judy Laine's recipe, a hurricane survivor whose home was flooded with 10 feet of water and who broke both legs during the storm. It's comforting and very inexpensive. Some bisques are vegetarian, but most all have cream. This doesn't, so I'm not sure why it's called a bisque. It's sweet and hot at the same time. I recommend you use less cayenne and jalapeno if you prefer less spicy. Molasses gives it an appealing and distinctive taste, though I'm sure you could use other sweeteners if you don't have any.

2 cloves garlic
1 tablespoon thyme
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon sugar
1 pound sweet potatoes, peeled and cut into 1-inch cubes
4 cups rich chicken stock or broth (if using store-bought stock, add a chicken bouillon cube)
1 cup evaporated milk (whole or fat-free)
1/2 cup heavy cream (or whole or fat-free evaporated milk)
1/4 cup dry sherry (optional)
1/2 cup heavy cream, whipped, for garnish (optional)
2 tablespoons chopped chives, for garnish (optional)

Steps:

  • In a large saucepan over medium-high heat, heat the oil. Add the onion, garlic, thyme, cinnamon, allspice, cloves, salt, pepper and sugar and cook until the vegetables are soft and lightly browned, about 5 minutes. Add the sweet potatoes, stock or broth, milk and cream. Cook with bubbles just forming on the surface until the potatoes are soft, 15 to 20 minutes. Remove from the heat and puree the soup until smooth. This can be done in the pot with a handheld stick (immersion) blender or in a blender or food processor. (If using a blender or food processor, strain the soup, puree the solids and add the hot liquid back slowly in small batches, pulsing between each addition.) Adjust the thickness by adding more stock, milk or cream. Add sherry, if desired, stirring to combine. Serve in individual bowls with whipped cream or chives or both, if desired.

Found a recipe for this in Eating Well, but wanted to change it to my taste. I had a lot of small sweet potatoes from the garden and this is a great way to use them up. So yummy and filling. Love the spices. You have to try it with the Chopped Peanut and Cilantro garnish. It adds a great flavor and texture contrast. Enjoy!!

3 to 4 dash(es) green or red tabasco sauce, or pinch of red pepper flakes, or hot sauce of your choice.
salt and pepper to taste
chopped dry roast peanuts for garnish
chopped cilantro for garnish
chopped scallions for garnish (optional)

Steps:

  • 1. Prick sweet potatoes in several places with a fork. Microwave on High until just cooked through, 7 to 10 minutes. Set aside to cool. Alternative is to bake in oven, but Microwave is faster.
  • 2. Heat butter or oil in a large saucepan or Dutch oven over medium-high heat. Add onion and cook, stirring, until it just begins to brown, 2 to 4 minutes. Add garlic stirring, for 1 minute more. Careful not to burn the garlic. Stir in V8, green chiles, ginger and allspice. (If you use pepper flakes, I would add them here.) Adjust the heat so the mixture simmers, cook for 10 minutes stirring occasionally.
  • 3. Meanwhile, peel the sweet potatoes and chop into bite-size pieces. Add half to the pot along with broth, peanut butter, sugar and hot sauce (if desired). Puree until completely smooth with an immersion blender. (Alternatively, process in food processor or blender in batches and return puree to pot.)
  • 4. Add the rest of the chopped potato pieces to the pot and stir well to combine. Adjust seasonings to taste. Thin the bisque with water or broth, if needed. Season with pepper. Heat until hot. Garnish with chopped peanuts and cilantro or scallions, if desired.
  • 5. Note: I also used a tiny squeeze of fresh lemon juice to my bowl and it really brightened the flavors.

3 sweet potatoes
4 potatoes, peeled and quartered
1 large onion, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter
10 cups water
1 ½ tablespoons all-purpose flour
¼ cup chicken broth
⅜ cup buttermilk
1 teaspoon freshly grated nutmeg
1 teaspoon ground ginger
1 teaspoon ground white pepper
1 teaspoon dried thyme
½ teaspoon ground cumin
salt to taste
ground black pepper to taste

Steps:

  • Roast sweet potatoes in 450 degree F (230 degrees C) oven for 30 minutes. Remove from oven and slice open, allowing to cool while assembling rest of soup.
  • Saute onion and garlic in olive oil and butter until soft and slightly browned. Add potatoes to pot and saute 1 minute. Stir in flour. Deglaze pan with broth, scraping up brown bits. Add water and sweet potato flesh. Bring mixture to a boil and reduce heat to medium low. Simmer partially covered for approximately 30 minutes or until vegetables are tender. (Liquid will have reduced to approximately 8 cups.)
  • Remove from heat and puree soup in batches in blender or directly in pot with hand-held blender.
  • Return soup to pot and re-heat over low heat. Add buttermilk, nutmeg, ginger, white pepper, thyme, cumin, and salt and pepper to taste, stirring well.

Time 40m

Yield 6

Number Of Ingredients 9

1/3 cup finely chopped pancetta (about 2 1/4 oz)
1 1/2 cups cubes (1 inch) sourdough bread
1 teaspoon chopped fresh or 1/4 teaspoon dried rosemary leaves
2 large sweet onions, chopped (2 cups)
4 cups cubed peeled sweet potatoes (2 medium)
1 can (12 oz) evaporated low-fat milk
2 cups water
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt

Steps:

  • In 12-inch nonstick skillet, cook 1/4 cup of the pancetta over medium-low heat 4 minutes or until golden brown and crisp. Remove pancetta to paper towels to drain; reserve drippings in skillet. Cook bread cubes in drippings 7 minutes, stirring frequently, until golden and crisp. Stir in rosemary; cook 1 minute. Return pancetta to skillet. Remove from heat; set aside.
  • In 4-quart Dutch oven, cook remaining pancetta over medium-low heat 4 minutes or until golden brown and crisp. Add onions; cook 5 minutes, stirring occasionally. Add sweet potatoes, milk, water, pepper and salt. Heat to boiling; reduce heat. Cover; simmer 15 minutes.
  • In blender or food processor, place 3 cups soup. Cover; blend until smooth. Pour blended soup into large bowl; cover to keep warm. Repeat procedure with remaining soup. Sprinkle individual servings with croutons.

Tips:

  • Use fresh sweet potatoes: Fresh sweet potatoes have a more vibrant flavor and a smoother texture than older ones.
  • Roast the sweet potatoes before making the soup: Roasting the sweet potatoes intensifies their flavor and caramelizes their natural sugars.
  • Use a good quality vegetable broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and doesn't contain any added sugar or preservatives.
  • Don't overcook the soup: The soup should be simmered until the sweet potatoes are tender, but not mushy. Overcooking the soup will make it bland and watery.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream to brighten up the flavors.

Conclusion:

Sweet potato bisque is a delicious and nutritious soup that is perfect for a fall or winter meal. It is easy to make and can be tailored to your own taste preferences. With just a few simple ingredients, you can create a flavorful and satisfying soup that is sure to please everyone at your table.
