Turn batter out into the crust and smooth the top.
- Bake in the preheated oven until no longer wobbly in the center, about 1 to 1 1/2 hours. Remove from the oven and set on a wire rack in a draft-free area until completely cooled, about 1 hour. (Any rapid temperature change will make the cheesecake crack.)

Tips:
- Choose the right sweet potatoes: For the best flavor and texture, choose sweet potatoes that are firm, smooth, and free of blemishes. Look for sweet potatoes that are about the same size so that they cook evenly.
- Bake the sweet potatoes thoroughly: This will help to bring out their natural sweetness and make them easier to mash. Bake the sweet potatoes at 400°F for about an hour, or until they are tender when pierced with a fork.
- Use a food processor to mash the sweet potatoes: This will help to create a smooth and creamy filling. If you don't have a food processor, you can use a potato masher, but be sure to mash the sweet potatoes until they are very smooth.
- Don't overmix the cheesecake filling: Overmixing can make the cheesecake dense and grainy. Mix the filling just until it is well combined.
- Bake the cheesecake in a water bath: This will help to prevent the cheesecake from cracking. Place the cheesecake pan in a larger pan filled with hot water. The water should come about halfway up the sides of the cheesecake pan.
- Chill the cheesecake before serving: This will help the cheesecake to set and firm up. Chill the cheesecake for at least 4 hours, or overnight.
Conclusion:
Sweet potato cheesecake is a delicious and unique dessert that is perfect for any occasion. It is made with a creamy sweet potato filling and a graham cracker crust. The cheesecake is baked in a water bath, which helps to prevent it from cracking. Once the cheesecake is chilled, it is topped with a dollop of whipped cream and a sprinkle of cinnamon.
