- Using a mandolin slicer slice the sweet potatoes on a thin setting. Make sure that the slices have an even thickness on each slice. If the slices are too thin on one side that side will burn before the thicker side cooks.
- Soak all of the slices in a large bowl covered with cold water for 20 minutes. This removes some of the starch for a crisper chip.
- Thoroughly dry the slices with a towel or paper towels.
- Lightly brush the outside of each slice with a light coating of the vegetable oil.
- Sprinkle the salt and pepper or other optional spices onto each side of the slices.
