Provided by Justine Pattison

Time 1h35m

Number Of Ingredients 18

1 tbsp cold-pressed rapeseed oil
1 medium onion , finely chopped
2 garlic cloves , thinly sliced
1 tbsp medium curry powder
200g dried split red lentils
500g sweet potatoes , peeled and cut into chunks
2 tbsp lime (or lemon) juice plus lime wedges, to serve
100g full-fat natural bio yoghurt
coriander , to serve
100g green beans , trimmed and cut into short lengths
250g cauliflower , cut into small florets
2 medium carrots , sliced
1 tbsp cold-pressed rapeseed oil
1 medium onion , cut into thin wedges
2 garlic cloves , thinly sliced
1 tsp medium curry powder
200g ripe tomatoes , roughly chopped
1 long green chilli , finely sliced (deseeded if you don't like it too hot)

Steps:

  • To make the dhal, heat the oil in a large non-stick pan and fry the onion over a low heat for 10 mins, stirring regularly, until softened and very lightly browned - add the garlic for the final min. Stir in the curry powder and cook for 30 secs more.
  • Add the lentils, 1 tsp flaked sea salt and 1 litre of water. Stir in the sweet potatoes and bring to the boil. Reduce the heat to a simmer and cook the lentils for 50 mins or until the dhal is thick, stirring regularly. Add a splash of water if the dhal thickens too much. Stir in the lime or lemon juice and season to taste.
  • While the dhal is cooking, make the curried vegetables. Half-fill a medium non-stick pan with water and bring to the boil. Add the beans, cauliflower and carrots, and return to the boil. Cook for 4 mins, then drain.
  • Return the pan to the heat and add the oil and onion. Cook over a medium-high heat for 3-4 mins or until the onion is lightly browned, stirring regularly. Add the garlic and cook for 1 min more until softened. Stir in the curry powder and cook for a few secs, stirring.
  • Add the tomatoes, green chilli according to taste and 200ml cold water. Cook for 5 mins or until the tomatoes are well softened, stirring regularly. Stir in the blanched vegetables and cook for 4-5 mins or until hot throughout. Season with black pepper.
  • Divide the dhal between four deep bowls and top with the curried vegetables. Serve with the yogurt, coriander and lime wedges for squeezing over.

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 15

60 ml oil
2 onions
800 g sweet potatoes
1 tablespoon curry powder
1 teaspoon turmeric
500 g spinach
50 g ground almonds
2 chilies
200 ml coconut milk
1/2 lime
3 tablespoons oil
8 garlic cloves
1 tablespoon seed spices
4 cardamom pods
250 g split peas

Steps:

  • Get the curry going first. In a wide, heavy-based pan, fry the onion in the oil with a lid on to soften for about 5 minutes. Stir in the sweet potato chunks, curry powder, and turmeric, and fast-fry with the lid off until it begins to stick to the bottom.
  • In two batches, stir in the spinach, adding the ground almonds and chilli. When all the spinach is in the pot and beginning to collapse, pour in the coconut milk, add some salt, stir well and put the lid back on.
  • Keep it at an active simmer, stirring from time to time, for about 20 minutes until the spuds are cooked. Take the lid off and let the curry reduce down to a thicker consistency (another 10 minutes or so).
  • For the dhal, gently fry the garlic and all the seeds (don't forget the cardamom) in the oil until they are a deep golden brown. Tip in the split peas and give them a good roll around in the garlicky oil then pour in 1l of water and turn the heat up.
  • Slowly bring it to a gently boil over around 10 minutes then skim, cover and leave to simmer for 45 minutes-1 hour until the peas are well-cooked. Taste for seasoning - dried pulses take a lot of salt to reach their flavour zenith.
  • Finish the curry by stirring in the lime juice and adjusting the seasoning. Serve with the dhal on the side and all the usual suspects (basmati rice, chutney, and yoghurt).

Tips:

1. Use a variety of vegetables: This recipe is a great way to use up leftover vegetables. Feel free to add or substitute any vegetables that you like. Some good options include carrots, celery, bell peppers, and spinach. 2. Don't overcrowd the pan: When cooking the vegetables, make sure not to overcrowd the pan. This will prevent them from cooking evenly. If necessary, cook the vegetables in batches. 3. Use a good quality curry paste: The curry paste is what gives this dish its flavor. Make sure to use a good quality paste that is made with fresh ingredients. 4. Adjust the spice level to your liking: This recipe is mild in terms of spice level. However, you can easily adjust the spice level by adding more or less curry paste. 5. Serve with rice or your favorite bread: This dish is traditionally served with rice. However, you can also serve it with your favorite bread or even quinoa.

Conclusion:

Sweet potato dhal is a delicious and healthy dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it is also very easy to make. If you are looking for a new vegetarian dish to try, I highly recommend this recipe.
