1-1/2 cups mashed sweet potatoes
1-1/2 teaspoons ground cinnamon, divided
1 cup sugar
1 cup packed brown sugar
1 cup water
1/2 cup butter, cubed

Steps:

  • Preheat oven to 350°. Roll out each biscuit into a 3-in. circle. In a small bowl, mix sweet potatoes and 3/4 teaspoon cinnamon. Place 1 tablespoon sweet potato mixture on one side of each circle. Fold dough over filling. Press edges with a fork to seal. Transfer to a greased 13x9-in. baking pan, overlapping slightly., In a small heavy saucepan, combine sugars, water, butter and remaining cinnamon. 1 large sweet potato
1 (10 ounce) can refrigerated biscuit dough (such as Pillsbury Grands!®)
2 cups water
1 ½ cups white sugar
2 teaspoons pumpkin pie spice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place butter in a 9x13-inch baking dish; melt in the preheating oven.
  • Peel and cut sweet potato into 1/2-inch thick slices and cut in half again to make half-moon pieces. Pull each biscuit apart to make two. Wrap each biscuit around a piece of sweet potato. Arrange dumplings in the prepared baking dish.
  • Bring water, sugar, and pumpkin pie spice to a boil in a pan; stir until sugar is dissolved. Pour sauce over the dumplings.

4 medium sweet potatoes
1 (12 1/4 ounce) jar caramel topping
1 teaspoon pumpkin pie spice
1 teaspoon salt
1/4 cup butter or 1/4 cup margarine
cooking spray

Steps:

  • Prepare the sweet potatoes by washing, peeling, and cutting into approximately 1 inch by 1/2 inch portions or smaller. Spray the bottom and sides of a glass casserole dish. Place the sweet potato portions in the casserole, sprinkle with 1 teaspoon of salt (more or less if you prefer), and 1 teaspoon of pumpkin pie spice. Slice the 1/2 stick butter into about 8 pieces and dot over the potatoes. Pour on the caramel topping. Cover and bake at 350 degrees for 45 minutes. 1-1/2 cups water
DUMPLINGS:
1-1/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder

2 teaspoons vanilla extract

1 ½ cups self-rising flour
2 tablespoons confectioners' sugar
¼ cup butter, melted
1 egg, beaten
¼ cup milk
1 ⅓ cups water
⅓ cup golden syrup
½ cup brown sugar
½ teaspoon lemon juice
¼ cup butter

Steps:

  • In a medium bowl, stir together the flour and confectioners' sugar. Make a well in the center. Combine the melted butter, egg and milk; pour into the well. Use a knife to stir until just combined. Set the dumpling mixture aside.

  • Preparation Preheat heat oven to 425 degrees. Place chopped potatoes and ½ cup of water into a 9-by-13-inch baking dish, covered with foil. Bake for 1 hour covered and 15 minutes uncovered. Remove dish from oven and add remaining half cup of water to loosen up any bits in the baking dish. Place all the solids and liquids into a strainer lined with cheesecloth. Let drain into a saucepan and cool for 30 minutes. Once cool enough to handle, squeeze as much liquid out from the potatoes in cheesecloth as possible. You should end up with a cup and a half of liquid. In a saucepan, bring the sweet-potato liquid to a boil, then reduce heat for a steady simmer. Allow the liquid to reduce for 15-20 minutes until it starts to thicken and starts to form a caramel; stir often in the final minutes. Pour into a jar and in store the refrigerator for up to 2 weeks. Can be served with roast meats or as a sauce over ice cream or brownies. Oh, and don't forget to eat the leftover sweet potato mash!
