SOUTHERN SWEET POTATO PIE

Southern Sweet Potato Pie image

This Mississippi sweet potato pie is very popular in the South. It's a particular favorite at our house because we always have plenty of sweet potatoes in our garden. Try it with a dollop of whipped cream. -Bonnie Holcomb, Fulton, Mississippi

Yield Makes 12

Number Of Ingredients 11

t1 large orange-flesh sweet potato (about 1 1/4 pounds), baked until tender, peeled
2 eggs, beaten to blend
1/2 cup milk
1/2 cup unsulfured (light) molasses
3 tablespoons butter, melted
1 1/4 cups all purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground ginger

Steps:

  • Preheat oven to 400°F. Line 12 large muffin cups with foil muffin papers.
  • Puree potato in processor. Measure 1 cup puree and transfer to bowl. Mix in eggs, then milk, molasses and butter. Add all remaining ingredients and stir until just mixed. Divide batter among muffin cups. Bake until springy to touch and tester inserted into center comes out with just a few moist crumbs, about 25 minutes. Transfer to rack. Serve warm or at room temperature.

Tips:

  • For the perfect flaky crust, use a combination of all-purpose flour and butter. Make sure the butter is cold and cut into small pieces before mixing it with the flour.
  • When rolling out the dough, use a light touch and avoid overworking it. This will help prevent the crust from becoming tough.
  • Before filling the pie crust, pre-bake it for about 15 minutes. This will help prevent the crust from becoming soggy.
  • When making the sweet potato filling, use fresh, peeled sweet potatoes. This will give the pie a more vibrant color and flavor.
  • Be sure to cook the sweet potatoes until they are very soft before mashing them. This will help create a smooth and creamy filling.
  • For a richer flavor, use dark molasses instead of light molasses in the filling.
  • If you don't have any ground cloves, you can substitute a mixture of cinnamon and nutmeg.
  • For a shiny and golden crust, brush the top of the pie with melted butter or an egg wash before baking.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to meld together.

Conclusion:

Sweet potato molasses pie is a delicious and comforting dessert that is perfect for any occasion. With its flaky crust and creamy, flavorful filling, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special treat, give this recipe a try!
