Number Of Ingredients 10

1 egg
Pinch sea salt
1 1/2 pounds calves liver, very thinly sliced
1 cup flour
2 cups fine dry breadcrumbs
1/4 cup butter or vegetable oil
4 large shallots, peeled and diced
Juice and segments of 2 limes
2 teaspoons brown sugar
2 hard cooked eggs

Steps:

  • Beat the egg with a pinch of salt. Lightly flour the slices of liver, shake off the excess, and dip them first into the beaten egg and then into the breadcrumbs.
  • In a large heavy skillet, over a medium high heat, melt the butter and quickly sear the liver until brown on both sides. Turn the liver only once to avoid overcooking. Remove the liver to a platter and cover with loosely tented foil to keep warm.
  • To the same skillet, over a low heat, add the shallots and cook 3 to 4 minutes. Add the lime juice and sugar, stirring until the sugar is dissolved. Add the lime segments. Pour this mixture over the liver and garnish with slices of hard cooked egg.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and prevent any scrambling later on.
  • Use fresh ingredients: The fresher your ingredients are, the better your dish will taste. If possible, try to buy your ingredients from a local farmer's market or grocery store.
  • Don't overcook the chicken livers and hearts: They should be cooked just until they are no longer pink in the center. Overcooking will make them tough and dry.
  • Use a good quality soy sauce: The soy sauce is one of the most important ingredients in this dish, so make sure you use a good quality one. A dark soy sauce will give the dish a richer flavor.
  • Serve the dish immediately: This dish is best served immediately after it is cooked. The chicken livers and hearts will be at their most tender and flavorful when they are hot and fresh.

Conclusion:

Sweet and sour chicken livers and hearts is a delicious and easy-to-make dish that is perfect for a quick and easy meal. The chicken livers and hearts are cooked in a sweet and sour sauce that is made with soy sauce, vinegar, sugar, and pineapple.
