SPICY CORNBREAD STUFFING WITH CHORIZO AND SWEET POTATOES

Spicy Cornbread Stuffing with Chorizo and Sweet Potatoes image

This flavor-packed holiday side feeds a crowd of 20 and takes care of both the stuffing and the sweet potatoes. If you don't like spicy dishes, omit (or reduce) the fresh chiles.

Categories     Stuffing/Dressing     Bread     Sweet Potato/Yam     Sausage     Onion     Celery     Chile     Jalapeño     Garlic     Paprika     Kale     Wine     Sage     Egg     Stock     Vinegar     Butter     Thanksgiving

Yield 20 servings

Number Of Ingredients 20

3 lb. cornbread, cut into 1" cubes (about 20 cups)
2 lb. sweet potatoes, peeled, cut into 1/2" pieces (about 6 cups)
2 Tbsp. kosher salt, divided, plus more
3 Tbsp. extra-virgin olive oil, divided
2 lb. fresh chorizo, torn into small pieces
2 large onions, chopped
2 celery stalks, chopped
2 Fresno chiles or jalapeños, chopped (optional)
6 garlic cloves, thinly sliced
2 tsp. paprika
3 tsp. freshly ground black pepper, divided
2 bunches Tuscan kale, stemmed, torn into 2" pieces (about 12 cups)
1 cup hard cider or dry white wine
1/4 cup chopped sage
6 large eggs, beaten to blend
2 quarts homemade chicken stock or low-sodium chicken broth
1/4 cup apple cider vinegar
3/4 cup unsalted butter, melted, divided
Special Equipment
A large roasting pan or large disposable aluminum roasting pan

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 350°F. Divide cornbread between 2 large rimmed baking sheets. Bake, tossing occasionally and rotating pans top to bottom halfway through, until beginning to brown in spots and dry out, 35-40 minutes. (Drying out the stuffing will help it absorb the eggs and stock without becoming mushy.) Let cool.
  • Meanwhile, cook sweet potatoes in a large pot of boiling salted water until just beginning to soften but not fully cooked through, 7-9 minutes. Drain; transfer potatoes to a large bowl.
  • Heat 2 Tbsp. oil in a large skillet over medium-high. Cook chorizo, breaking up with a wooden spoon, until lightly browned and slightly undercooked, about 5 minutes. Using a slotted spoon, transfer to bowl with sweet potatoes.
  • Heat remaining 1 Tbsp. oil in same skillet over medium. Add onions, celery, chiles (if using), garlic, paprika, 1 Tbsp. salt, and 1 tsp. pepper and cook, stirring often, until vegetables are tender, about 15 minutes. Add kale in batches as it wilts, then cider and sage and cook, stirring occasionally, until liquid is almost completely evaporated, about 5 minutes. Transfer to sweet potato mixture and toss to combine.
  • Whisk eggs, stock, and vinegar in a large bowl or pitcher; season with remaining 1 Tbsp. salt and 2 tsp. pepper.
  • Brush large roasting pan with an even layer of melted butter. Spread one-third of cornbread pieces in pan. Top with half of sweet potato mixture and spread to evenly distribute. Drizzle one-third of egg mixture over. Repeat with another third of the cornbread, remaining sweet potato mixture, then another third of egg mixture. There will be a lot of liquid in the pan-don't worry, it will become absorbed as the stuffing bakes. Top with remaining cornbread, then drizzle remaining egg mixture over. Brush top with remaining butter. Cover pan with foil and bake stuffing until heated through, about 45 minutes. Uncover and bake until surface is golden and crisp, 20-30 minutes longer.
  • Do Ahead: Cornbread can be toasted 1 day ahead; store tightly wrapped at room temperature. Sweet potato, chorizo, and kale mixture can be cooked 1 day ahead; cover and chill.

STUFFED CABBAGE WITH ROASTED SWEET POTATO STUFFING RECIPE - (4.5/5)

Stuffed Cabbage with Roasted Sweet Potato Stuffing Recipe - (4.5/5) image

Provided by Alqualonde

Number Of Ingredients 22

2 medium sweet potatoes, peeled, diced
1 red onion, peeled, diced
1 large tart apple such as Granny Smith, peeled, diced
3-4 cloves garlic, chopped
4 sausages, these can be sweet Italian, chicken apple, turkey, buffalom, cut into chunks
1 cup natural apple juice or cider
1 tablespoon pure maple syrup
1 tablespoon balsamic or apple cider vinegar
1 sprinkle of sea salt, cinnamon, nutmeg, fennel
handful of raisins or dried cranberries
1 to 1 1/2 cups quinoa, cooked
1/2 cup apple juice or cider
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
1 teaspoon onion powder
1 clove garlic, minced
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
sea salt, to taste
extra virgin olive oil, as needed
strained tomatoes (24-ounce jar or can)

Steps:

  • Cook your cabbage. You'll need a fresh, large head of green cabbage. Trim the bottom root and cut an X into the center core. Bring a large pot of water to a boil and cook the head of cabbage for about five minutes until soft; remove and drain well. Make the filling. Preheat the oven to 375 degrees F. For the filling you'll need: 2 medium sweet potatoes, peeled, diced 1 red onion, peeled, diced 1 large tart apple, such as Granny Smith, peeled, diced 3-4 cloves garlic, chopped 4 sausages- these can be sweet Italian, chicken apple, turkey, buffalo, cut into chunks Extra virgin olive oil, as needed 1 cup natural apple juice or cider 1 tablespoon pure maple syrup 1 tablespoon balsamic or apple cider vinegar Sprinkle of sea salt, cinnamon, nutmeg, fennel To add in later: A handful of raisins or dried cranberries 1 to 1 1/2 cups cooked quinoa Throw the vegetables, apple, and sausage into a roasting pan and drizzle with a little olive oil. Add the apple juice, maple syrup, vinegar, salt and spices and toss well to coat. Roast in the oven till soft- about 40 to 50 minutes. Stir a few times during roasting to distribute the sauce and seasoning. Meanwhile make your sauce. To make your sauce you'll need: 1 24-oz jar or can of strained tomatoes 1/2 cup apple juice or cider 2 tablespoons maple syrup 2 tablespoons balsamic vinegar 1 teaspoon onion powder 1 clove garlic, minced 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ground cloves Sea salt, to taste Combine the sauce ingredients in a sauce pan and stir. Cook over medium heat until simmering. Cover and lower the heat to a gentle simmer. Taste test before using in the recipe. If you like a bit of spice, add a dash of hot pepper- but please taste test first. To assemble: Preheat oven to 350 degrees F. Lightly oil four serving dishes or one medium-large baking dish. When the cabbage has cooled enough for you to handle, cut another 1/2 inch or so off the bottom core if you need to and gently peel off the leaves one at a time; set the leaves aside on a plate or board. Trim any large leaves that may have a thick spine. Smaller leaves can be combined- use two to make one roll if you need to. Combine the roasted vegetables and sausage with the cooked quinoa- start with a cup and see how much you need. If you want to stretch the filling, use more quinoa. Add a handful of raisins and stir in. To stuff: Lay a cabbage leaf on your work surface and add a spoonful of filling in the center. Fold in the side of the leaf and roll it up; tuck it into the prepared baking dish seam side down. Repeat for the remaining leaves and filling. Pour the sauce over the stuffed cabbage and bake in the center of a preheated oven for about 30 minutes, till heated through and bubbling. You can make this stuffed cabbage ahead of time, if you wish; cover and chill. Add an extra 10 minutes or so to the baking time.

Yield 6 cups 12 people

Number Of Ingredients 6

About 5 large Idaho potatoes; one can of tomatoe paste; one green and red pepper
two stalks of scallions
one small box of raisins
one teaspoon of salt
two tablespoons of hot sauce
one tablespoon of sugar and two tablespoons of Breakstones whipped butter

Steps:

  • Clean and mince up your vegetables, set aside until ready to add to potatoes; clean and peel potatoes into quarter inch cubes; boil until soft enough to mash; once potatoes are cooked, mash until there are no lumps; add vegetable ingrediants, raisens, salt, suger, hot sauce and butter into bowl of potatoes until potatoes are completely mixed. Stuff your turkey with sweet potatoe stuffing.

Tips:

  • Use fresh ingredients: Fresh fruits and vegetables will give your stuffing the best flavor. If you can, try to use organic ingredients.
  • Don't overcook the stuffing: Overcooked stuffing will be dry and crumbly. Cook it just until it is heated through.
  • Add some nuts or seeds: Nuts and seeds will add a nice crunch to your stuffing. Try adding chopped walnuts, pecans, almonds, or sunflower seeds.
  • Use a variety of herbs and spices: Herbs and spices will add flavor and depth to your stuffing. Try adding some sage, thyme, rosemary, paprika, or nutmeg.
  • Moisten the stuffing: If your stuffing is dry, you can add some chicken broth or vegetable broth. You can also add some melted butter or olive oil.
  • Let the stuffing rest: After you have made the stuffing, let it rest for a few minutes before you stuff the turkey. This will allow the flavors to meld together.

Conclusion:

Sweet stuffing is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover bread and vegetables, and it can be easily customized to fit your taste. Whether you like it simple or savory, sweet stuffing is a dish that is sure to please everyone at your table.
