1 1/2 teaspoon pure vanilla extract
5 large eggs

  • Set pan inside a large, shallow roasting pan. Carefully ladle boiling water into roasting pan to reach halfway up sides of springform pan. Bake 45 minutes; reduce oven temperature to 325 degrees. Continue baking until cake is set but still slightly wobbly in the center, about 30 minutes more. Turn off oven; leave cake in oven with the door slightly ajar, 1 hour. Transfer pan to a wire rack; let cool completely. Refrigerate, uncovered, at least 6 hours or overnight. Before unmolding, run a knife around the edge of the cake.

One secret to a lighter, fluffier cheesecake? Use the foaming power of eggs. When you beat egg whites to stiff peaks and gently fold them into the cream cheese mixture, the eggs add more volume and lightness because of trapped air. • Make sure the cream cheese is at room temperature before using it. This will help it mix smoothly with the other ingredients.
  • Don't overbeat the cheesecake batter. Overbeating can cause the cheesecake to be dense and crumbly.
  • Bake the cheesecake in a water bath. This will help to prevent the cheesecake from cracking.
  • Chill the cheesecake for at least 4 hours before serving. This will allow the flavors to meld and the cheesecake to set properly.
  • When making the raspberry swirl, use fresh or frozen raspberries. Frozen raspberries should be thawed before using.
  • Add the raspberry swirl to the cheesecake batter just before pouring it into the prepared pan. This will help to prevent the swirl from sinking to the bottom of the cheesecake.
  • If you don't have a springform pan, you can use a 9-inch round baking pan. Just be sure to line the pan with parchment paper before pouring in the cheesecake batter.
