Categories     Side Casseroles

Time 55m

Number Of Ingredients 14

24 oz small curd cottage cheese
3 eggs
1/4 c all purpose flour
1/4 c butter, melted
20 oz frozen chopped broccoli, thawed and drained (or use fresh!)
2 c shredded swiss cheese
1 can(s) whole kernel corn, drained (8 3/4 ounce can)
1/4 c finely chopped onion
1/2 tsp salt
1/4 tsp pepper
4 dash(es) hot sauce
2 Tbsp butter
1/3 c soft breadcrumbs
8 slice bacon, cooked and crumbled

Steps:

  • 1. Combine the first 4 ingredients in the container of a blender or food processor. Process on high for 1 minute or until smooth, stopping once to scrape down the sides. Set aside.
  • 2. Combine the broccoli and the next 6 ingredients in a large bowl. Add the reserved cottage cheese mixture; stir well. Pour into a lightly greased shallow 2 quart casserole dish.
  • 3. Melt 2 tablespoons butter in a small saucepan over low heat; add the breadcrumbs and cook until golden, stirring occasionally. Remove from the heat; stir in the bacon.
  • 4. Sprinkle the breadcrumb mixture over the casserole. Bake uncovered at 350 degrees for 45 minutes or until thoroughly heated.

Tips:

  • Prep the Broccoli Right: Cut the broccoli florets into bite-sized pieces and blanch them in boiling water for 2-3 minutes. This helps retain their vibrant color and crisp texture.
  • Use Fresh Ingredients: The fresher the ingredients, the tastier the casserole. Opt for crisp broccoli, sharp cheddar cheese, and high-quality dairy products.
  • Don't Overcook the Broccoli: Blanching the broccoli briefly helps prevent overcooking. Remember, it will continue to cook in the casserole, so it's best to leave it slightly firm.
  • Season Wisely: Don't be shy with the seasonings! Add a generous amount of salt, pepper, garlic powder, and onion powder to enhance the flavors.
  • Don't Forget the Cheese: Use a good quality cheddar cheese for the best flavor. If you like, you can also add a sprinkle of Parmesan cheese on top before baking.
  • Bake Until Golden Brown: Keep an eye on the casserole as it bakes. You want the top to be golden brown and the cheese bubbly and melted.

Conclusion:

This Swiss broccoli casserole is a delightful and versatile dish perfect for any occasion. With its creamy, cheesy goodness and the vibrant crunch of broccoli, it's a crowd-pleaser. Whether you're looking for a comforting side dish or a hearty main course, this casserole delivers. Feel free to experiment with different cheeses, herbs, and seasonings to create your unique variation. Enjoy!
