SWISS STEAK

An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

SWISS STEAK

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

Provided by Alton Brown

Categories     main-dish

Time 3h15m

Yield 4 to 6 servings

Number Of Ingredients 14

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

MOM'S SWISS STEAK DINNER

Mom's Swiss Steak Dinner image

Comfort food all the way. I love swiss steak with fresh green beans, white rice and good crusty bread!!

Provided by babygirl65

Categories     One Dish Meal

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 lbs beef chuck steaks, 1-inch thick, trimmed
1 medium onion, sliced
1 bell pepper, sliced
1 (10 ounce) can cream of mushroom soup
1 (14 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
8 small new potatoes, unpeeled and quartered
1 (9 ounce) package green beans, frozen, fresh

Steps:

  • Heat oven to 425. Line 9 x 13 baking pan with heavy-duty aluminum foil, leaving 1 1/2 inch overhang all around.
  • Cut steaks into equal portions and place in prepared pan. Top with sliced onions and bell peppers. (I always use more onion and bell peppers, personal preference).
  • Whisk together soup, tomatoes with juice, Worcestershire sauce, thyme, salt, garlic powder, and pepper in a bowl until well blended. Pour over steaks, onions and bell peppers.
  • Cover pan with large sheet of heavy duty foil; roll edges tightly with overhang to seal.
  • Bake at 425 for 45 minutes.
  • Add potatoes; reseal with foil. Bake additional 45 minutes.
  • Uncover pan; add green beans. Reseal.
  • Bake an additional 15 minutes or until beans are tender and steak is cooked through.
  • Stir well before serving.

Tips:

  • Choose the right cut of beef: Chuck roast is the traditional cut used for Swiss steak, but you can also use round steak or flank steak. Just be sure to choose a cut that is at least 1 inch thick so that it can withstand the long cooking time.
  • Tenderize the beef: Pounding the beef with a meat mallet or rolling pin helps to break down the tough fibers and make the meat more tender. You can also use a commercial meat tenderizer.
  • Brown the beef: Browning the beef in a skillet before braising it helps to develop flavor and color. Be sure to brown the beef in batches so that you don't overcrowd the skillet and end up steaming the meat instead of browning it.
  • Use a good braising liquid: The braising liquid is what gives Swiss steak its rich flavor. You can use a variety of liquids, such as beef broth, red wine, or tomato sauce. Be sure to add some aromatics, such as onions, garlic, and herbs, to the braising liquid for extra flavor.
  • Cook the steak until it is fall-apart tender: Swiss steak should be cooked until it is fall-apart tender. This can take anywhere from 1 to 2 hours, depending on the thickness of the meat and the temperature of the oven.

Conclusion:

Swiss steak is a classic comfort food that is easy to make and always a hit with the family. By following these tips, you can make sure that your Swiss steak turns out perfectly tender and flavorful every time. So next time you're looking for a hearty and satisfying meal, give Swiss steak a try. You won't be disappointed!
