TACO LASAGNA
Equal parts lasagna and taco, this dish is comfort central, with layers of classic taco meat and toppings nestled between tender lasagna noodles and melty cheese. Use your favorite salsa to build the sauce -- milder to keep it kid-friendly or spicier to liven it up.

Steps:
- Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
- Heat the oil in a large skillet over medium-high heat until shimmering but not smoking. Add the ground beef and sprinkle with the chili powder and 1 teaspoon salt. Cook, breaking apart chunks of meat with the back of a spoon, and stirring often, until meat is crumbled and browned, 5 to 6 minutes. Stir in the salsa and 1 cup of water, bring to a simmer and cook until slightly reduced, about 4 minutes. Remove from the heat and set aside.
- Spread a quarter of the meat sauce over the bottom of a 9- by 13-inch baking dish. Lay a third of the noodles over the sauce, overlapping slightly and breaking them to fit, if needed. Leave a 1/2-inch space around the edges of the baking dish. Top the noodles with another quarter of the meat sauce and a third of the mozzarella. Make another layer with a third of the noodles, a quarter of the meat sauce and a third of the mozzarella. Repeat, making a final layer with the remaining third of the pasta and quarter of the sauce, making sure that the top layer of noodles is completely covered in sauce. Top with the remaining third of the mozzarella.
- Cover loosely with foil and bake until the cheese is melted and bubbling and the noodles are tender when pierced with a knife, about 1 hour. Remove the foil and cook 15 minutes more. Let rest 10 minutes. Dollop with sour cream and sprinkle with lettuce, tomato, Cheddar and chips.

Steps:
- -Pour 1 tsp canola or olive oil into a 9x9 baking pan. Spread it around to grease the bottom and sides. -Cover bottom of pan with one layer of tortilla pieces. -Sprinkle salsa on the tortilla pieces In the pan. -Sprinkle a layer of 1/2 of the beans. Layer 1/2 of the meat, then 1/2 of the spinach, 1/2 the tomatoes, 1/3 of the salsa, 1/3 of the cheese, 1/3 of the tortilla pieces. -Layer the rest of the beans, meat, spinach and tomatoes. -Layer 1/2 of the remaining salsa, tortilla pieces, and cheese. -Top with the remaining tortilla pieces, salsa, and cheese. -Bake at 375 degrees for 25-30 minutes. Notes: It's a great way to use leftovers from "taco night" or steak that you brought home from a restaurant. Make it work for you--try shortcuts. For instance, you could substitute chili for all the ingredients except tortillas and cheese. Go ahead and add/remove/substitute ingredients with things you prefer. If you like it spicy, dice 1-3 jalapenos and toss them in. We usually put two jalapenos in our taco meat. This recipe is very flexible. I usually use ground beef (seasoned with chili powder, garlic powder, oregano, cumin, paprika, salt and pepper), chopped fresh spinach (Erik doesn't like cilantro), pinto beans, and the other ingredients I listed. Funny, I made a casserole tonight in order to make tomorrow's supper easier. We had no beef so I simply made it with beans. You could throw in anything you like in your burritos or enchiladas. I think this casserole tastes just like enchiladas.
TACO CASSEROLE (MEXICAN LASAGNA)
Delicious tex mex flavors without the mess of making burritos, tacos, or cooking lasagna noodles. It is also very hearty - one recipe lasts for three meals with my family of three. I can't eat a lot of tomatoes so I don't add many to the recipe - you could certainly use a second jar of salsa if you like. If you don't have the cooking creme you can substitute 1 pack of cream cheese, softened, with 1/4 cup salsa and 1 tsp cumin mixed well. I make my own taco seasoning using cumin, garlic, salt, and pepper.

Steps:
- Heat oil in skillet over medium heat. Add onion and saute for a few minutes until soft. Add ground beef and brown. Drain fat and return skillet to heat, add taco seasoning 1/4 cup salsa (you can use more salsa if you like.).
- While the beef is cooking, prepare the other ingredients: Preheat the oven to 350*F; Grease your 9"x13" glass baking dish; cut the corn tortillas in half; and open all the canned beans.
- After the beef is done, layer the corn tortilla halves around your baking dish. I put two on each long side, one on each short side, and three in the center - it is ok if there are a few gaps. Spread the ground beef over top of the tortillas.
- Make another layer of tortilla halves, followed by the remaining salsa. (If you want to omit most of the tomatoes you could substitute 2 sauted onions and 1/2 cup salsa on this layer.).
- Add another layer of tortillas halves, and then a layer of black beans. I drained the beans but left a little liquid. If you want a finer layer you can pulse them in your food processor.
- Add another layer of tortilla halves, followed by the cooking creme (see the description for a substitution.) Sprinkle 1 1/2 cups of cheese over the cooking creme.
- Add a final layer of tortilla halves. Spread the refried beans over the top of the dish, and coat with remaining cheese.
- Bake at 350*F for 25-30 minutes until the cheese is golden and bubbly. Allow the dish to set for 5 minutes before serving. Serve with a large dollop of sour cream and sprinkle with diced tomato and sliced olives.
- I serve this as a meal by itself - you could certainly add rice, corn, or chips as a side dish if desired.

- If you like a spicy casserole, add some diced jalapenos or chili powder to the filling.
