6 large potatoes, peeled and cut into chunks
2 pounds lean ground beef (90% lean)
14 green onions, chopped (white portion only)
1-1/4 cups water
2 envelopes taco seasoning
1 cup 2% milk
1/4 cup butter
2 teaspoons garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded sharp cheddar cheese
2 cups shredded pepper Jack cheese

Steps:

  • Roll out pastry to fit two 9-in. deep-dish pie plates. Transfer pastry to pie plates; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack., Place potatoes in a Dutch oven and cover with water. Bring to a boil. 1 ½ pounds ground beef
1 onion, finely chopped
garlic powder to taste
salt and pepper to taste
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
¾ cup hot water
1 (11 ounce) can whole kernel corn, drained
1 (8.5 ounce) package corn muffin mix
1 cup shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. 1 lb ground beef
1 tablespoon butter
1 cup chopped onion
1 (1 1/4 ounce) envelope taco seasoning mix
1 1/2 cups frozen corn
3 cups mashed potatoes
1/2 cup grated cheese

Steps:

  • Preheat oven to 350°F.
  • Cook potatoes in boiling salted water until tender, about 20 minutes.
  • Drain potatoes and mash as usual.
  • Heat 1 tablespoons butter in saute pan; add onion, and saute for 5 minutes.
