Yield 4 servings

Number Of Ingredients 9

Two 12-ounce packages cherry tomatoes
2 tablespoons extra-virigin olive oil, divided
8 ounces spicy Italian salami (such as soppressata), cut into 1/4-inch strips (about 2 cups)
3 garlic cloves, minced
1/3 cup dry white wine
1/2 cup pitted black olives
1/3 cup drained capers
1/2 cup fresh Italian parsley, chopped
12 ounces fresh tagliatelle or fettucine

Steps:

Add wine to same skillet; simmer until slightly reduced, about 3 minutes. Stir in roasted tomatoes, olives and capers; toss to coat. Bring mixture to simmer; remove from heat and stir in salami mixture and parsley. Set sauce aside. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally; drain. Rewarm sauce over medium heat. Add pasta to skillet; toss with sauce and serve.

Tips:

  • Choose the right pasta: Tagliatelle is a great choice for this recipe, as it holds the sauce well and cooks evenly. However, you can use any type of pasta that you like.
  • Use high-quality ingredients: The better the ingredients, the better the dish will taste. Look for fresh, flavorful tomatoes, salty salami, and briny olives.
  • Don't overcrowd the pan: When cooking the pasta, make sure to use a large pot so that the pasta has plenty of room to move around. Overcrowding the pan will prevent the pasta from cooking evenly.
  • Roast the tomatoes in advance: Roasting the tomatoes in advance will help to concentrate their flavor and make them even more delicious. You can roast the tomatoes up to 2 days in advance.
  • Add the olives and salami at the end: Adding the olives and salami at the end of the cooking process will help to prevent them from becoming overcooked and tough.

Conclusion:

This tagliatelle with salami, olives, and oven-roasted tomatoes is a hearty, flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your pasta spicy or mild, with more or less cheese, this recipe is sure to please everyone at the table.
