1 tablespoon minced fresh gingerroot

1 ½ pounds chicken thigh (bone in and skin on (about 4 chicken thighs))
¼ cup full fat plain Greek yogurt
2 Tbs olive oil
2 tsp salt
1 tsp garam masala
2 tsp paprika
½ tsp turmeric
½ tsp cumin
½ tsp coriander
½ tsp garlic powder
¼- ½ tsp chili flakes (depending on desired spice level)
Optional garnishes: cilantro and fresh lime

Steps:

  • In a small bowl stir together yogurt, olive oil, and all of the spices.
  • Rub yogurt marinade over chicken thighs and place in a bowl.
  • Cover and leave to marinade for a minimum of two hours to overnight.
  • Once well-marinated, preheat oven to 425 degrees Fahrenheit.
  • Spread the marinated chicken thighs skin side up in a 8 by 8 inch parchment or foil lined pan.
  • Bake in oven for 30 to 35 minutes or until juices run clear and the internal temperature of the chicken is 165 degrees F.
  • If you would like to crisp up your chicken even further, turn on broiler and broil chicken for one to two minutes or until it has reached desired crispiness.

Juice of ½ lemon

Steps:

  • Place all marinade ingredients in a large sealable plastic bag. Mix to combine.

1/2 cup nonfat yogurt, plain
1 tablespoon paprika
1 tablespoon ginger, freshly peeled and minced
1 garlic clove, minced
1 teaspoon curry powder
1/4 teaspoon cinnamon
1/4 teaspoon saffron thread (or 1/4 tsp ground tumeric)
16 ounces chicken thighs (4 ct.)
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground

Steps:

  • Combine the yogurt, paprika, ginger, garlic, curry powder, cinnamon, and saffron in a zip-top plastic bag. Zip closed and squish with your hands to mix the ingredients inside the bag. Open and add chicken.
  • Refrigerate. turning the back occasionally, at least 8 hours or overnight. This is the point where I put this in the freezer.

2 teaspoons kosher salt
1 teaspoon black pepper
½ teaspoon ground cloves
2 tablespoons freshly grated ginger
3 cloves garlic, minced

Steps:

juice 2 lemons
4 tsp paprika
2 red onions, finely chopped
16 skinless chicken thighs
vegetable oil, for brushing
300ml Greek yogurt
large piece ginger, grated
4 garlic cloves, crushed
¾ tsp garam masala
¾ tsp ground cumin
½ tsp chilli powder
¼ tsp turmeric

Steps:

  • Mix the lemon juice with the paprika and red onions in a large shallow dish. Slash each chicken thigh three times, then turn them in the juice and set aside for 10 mins.
