1 1/2 lbs potatoes, Yukon Gold about 5 medium unpeeled
1/4 cup vinegar, red wine vinegar
1/2 teaspoon sugar
1/2 onions or 1/2 red onion, very thinly sliced

  • Cook potatoes in large pot of boiling salted water until tender, about 30 minutes. Drain. Cool to just warm, 10 to 15 minutes; peel potatoes. Cut each potato in half, then cut into 1/3-inch slices.

1/2 cup goat cheese crumbles

6 strips bacon, chopped
2 cloves garlic, minced
3 scallions, chopped

1 tablespoon all-purpose flour
1/4 cup sugar
1/2 cup white wine vinegar

  • Put the potatoes in a large pot and cover with water by 2 inches. Salt well and bring the water to a boil over medium heat.
