AUNTIE LISA'S SUAFA'I (SAMOAN TAPIOCA PUDDING W/BANANAS AND COCONUT CREAM) RECIPE - (4.2/5)

Auntie Lisa's suafa'i (Samoan tapioca pudding w/bananas and coconut cream) Recipe - (4.2/5) image

Provided by á-39535

Number Of Ingredients 7

8 bananas
4 cups water
1/2 cup tapioca
1 cup coconut milk
1/4 cup sugar
The sugar is optional but I do recommend it. Make sure you pull the inner strings off the bananas before boiling! The riper the banana the stronger the banana flavor.
Our family's personal taste is to use an entire can of purchased coconut milk and reduce the water accordingly. Or if using homemade coconut milk to reduce the water by a half a cup and increase the coconut milk a half a cup.

Steps:

  • Peel the bananas and place in a medium saucepan. Add the water and then bring to the boil. Turn the heat down and simmer for about 20 minutes. Break the bananas up with a wooden spoon, fork or masher. Sprinkle the tapioca into the saucepan while stirring. Add the coconut milk and then simmer over low/medium heat until the tapioca is cooked, about 15 minutes. Stir frequently. Finally, taste the suafa'i. If you like a little more sweetness, then add sugar to taste. Remove from the heat, leave for about 30 minutes to cool and then serve in a bowl or cup. You can also cool suafa'i completely, and refrigerate it. Once cooled, serve it as a snack or dessert.

TAPIOCA CREAM

For a light and lovely "something sweet" to cap off your meal, try this creamy dessert from Katie Anderson in Spokane, Washington. "To make it look extra-special, I sometimes sprinkle with cinnamon, nutmeg or a few sliced berries," Katie says. TIP: Tapioca will keep indefinitely if it's stored airtight in a cool dry place.

TAPIOCA CREAM CHEESE PUDDING

Tapioca Cream Cheese Pudding image

I whipped this recipe together the other day when I finally got tired of buying ready-made tapioca pudding! Maybe one day I'll actually try it from scratch (if only I can find a really good outlet for scratch)! Pudding servings are usually set at 1/2 cup, but mine are considerably larger than that! This pudding is thick enough that I have even used it as a nice filling for a 3-layer cake!

Tips for Making the Best Tapioca Cream:

  • Use high-quality tapioca pearls: Look for pearls that are uniform in size and color. Avoid pearls that are cracked or have a chalky appearance.
  • Soak the tapioca pearls before cooking: This will help to soften the pearls and reduce the cooking time.
  • Cook the tapioca pearls in plenty of water: The pearls should be able to move around freely in the water.
  • Bring the water to a boil, then reduce the heat to low: This will help to prevent the pearls from sticking together.
  • Cook the tapioca pearls for the recommended amount of time: Overcooked pearls will become mushy.
  • Rinse the tapioca pearls with cold water after cooking: This will help to remove any excess starch.
  • Sweeten the tapioca cream to taste: You can use sugar, honey, or another sweetener.
  • Flavor the tapioca cream with your favorite ingredients: Some popular options include vanilla, cinnamon, nutmeg, and coconut.
  • Serve the tapioca cream warm or cold: It can be enjoyed as a dessert, a snack, or a breakfast cereal.

Conclusion:

Tapioca cream is a delicious and versatile dessert that can be enjoyed by people of all ages. It is a good source of carbohydrates and fiber, and it can be made with a variety of different ingredients. With a little planning and effort, you can make a delicious tapioca cream that will impress your family and friends.
