PLUM SOUP WITH HONEYDEW TARRAGON ICE

- Make honeydew ice:
- Bring water and sugar to a simmer, stirring until sugar is dissolved. Transfer 1/2 cup hot syrup to a bowl and stir in tarragon, then cool. Chill remaining syrup.
