12 mini round tart shells (1 1/3-inch) or frozen mini phyllo shells, baked according to package instructions
6 tablespoons crème fraîche
2 tablespoons (.75 ounce) caviar, such as Ossetra or Beluga
2 tablespoons thinly sliced chives

Steps:

  • Arrange tart shells on a serving platter. Spoon crème fraîche into a small resealable plastic bag and snip a 1/4" opening in the corner. 1 cup all-purpose flour
1/2 stick (2 ounces) unsalted butter
1/4 teaspoon sugar
1/8 teaspoon salt
1 egg yolk
1/2 cup sour cream
8 tablespoons salmon caviar
2 tablespoons minced chives

Steps:

  • Preheat the oven to 400 degrees.
  • To make the dough, place the flour, butter, sugar and salt in the bowl of a food processor. Process for about 10 to 15 seconds. Add the egg yolk and 2 tablespoons of water. Process for another 10 seconds just until the mixture pulls away from the sides and begins to form a ball.
  • Place the dough between 2 sheets of plastic wrap and roll it out to a thickness of about 1/8 inch. Cut with a 2-inch circular cookie cutter. Press the circles of dough into 24 small, round or oval tartlet shells. Arrange on a cookie sheet and bake for 10 to 12 minutes until nicely browned. Remove from the molds.
  • To make the filling, place 1 teaspoon of the sour cream in each tartlet shell. Top each with 1 teaspoon of the caviar. Sprinkle with the chives and serve immediately.

2 tablespoons finely chopped fresh dill
2 teaspoons finely grated fresh lemon zest
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons finely chopped fresh chives
7 oz black lumpfish caviar (see cooks' note below)
Accompaniments: lemon wedges; 16 thin slices whole-wheat toast, buttered, then halved or quartered diagonally

a 9-inch nonstick springform pan; a small offset spatula

Steps:

  • Put 1/2 cup sour cream in a paper-towel-lined sieve set over a bowl, then let drain, covered with plastic wrap and chilled, 3 hours.
  • Stir together remaining 1/4 cup sour cream, eggs, onion, butter, dill, zest, salt, pepper, and 1 tablespoon chives until combined well.
  • Invert bottom of springform pan (so that turned-up edge is underneath for easy removal of tart) and close side of pan around bottom. Spread egg mixture evenly in pan with offset spatula, smoothing top. Cover surface with plastic wrap, pressing gently, and chill until firm, at least 3 hours.
  • Spread drained sour cream evenly over egg mixture with offset spatula.
  • Gently spread half of caviar on several sheets of paper towels to absorb excess cuttlefish ink. Carefully lift caviar from paper towels and spread on top of egg mixture (be careful not to smash caviar). Repeat method with remaining caviar. Serve cut into wedges and sprinkled with remaining chives, if desired.

6 hard-boiled eggs, very finely chopped
3 tablespoons mayonnaise
salt and pepper
1 sweet onion, very finely chopped
8 ounces cream cheese
2/3 cup sour cream
black caviar
20 crackers, to serve

Steps:

  • Mix the bottom layer ingredients and put in an 8 inch springform pan.
  • Put middle layer on top of that; and then mix top layer ingredients and put on top.
  • Chill overnight.
  • Use a cookie cutter on top and fill with caviar to make a nice design.
  • We used a heart shape at the wedding and filled it with salmon roe and made a nice design of salmon roe around the border-- one of our colors was orange for the wedding so it looked lovely.
  • I've also seen this with small red caviar in the middle in a heart shape with black caviar all around the edges-- gorgeous.
  • remove the sides of the springform pan to serve with crackers.

All-purpose flour, for work surface
Pate Sucree for Individual Peach Tarts
Lemon Curd for Red Currant and Lemon Tartlet
Red Currant Curd
Swiss Meringue for Red Currant and Lemon Tartlets
Raspberry Sauce
Pomegranate seeds, for garnish

Steps:

  • On a lightly floured surface, roll out pastry 1/8 inch thick. Cut into 10 rounds with a 4-inch cutter. Fit into 3 1/2-inch round tart pans. Using scissors or a sharp paring knife, trim pastry even with edge of tart pans. Transfer to refrigerator to chill for 30 minutes.
  • Preheat oven to 375 degrees. Prick pastry all over with the tines of a fork. Line pastry with parchment rounds; fill with pie weights or dried beans. Bake until pastry begins to color around the edges 15 to 20 minutes. Remove the parchment paper and weights, and continue to bake just until the pastry dries out and turns golden, 10 to 20 minutes more. Cool completely on a wire rack before filling.
  • Fill half of each tart shell with lemon curd, and the other side with currant curd. Smooth the top flush with edge of tart shell.
  • Pipe meringue onto tarts using a 3/8-inch star tip to completely cover. Preheat broiler. Place tarts under broiler and broil until golden brown, alternatively, you can use a hand-held propane torch.
  • Place each tart on a serving plate. Serve with raspberry sauce, and garnish with a few pomegranate seeds.
