2 ¼ pounds boneless pork, cut into bite-sized pieces
2 tablespoons soy sauce
½ lemon, juiced
2 pounds pork liver
3 tablespoons olive oil
2 potatoes, quartered
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 large tomatoes, diced
1 green bell pepper, cut into chunks
salt and ground black pepper to taste

Steps:

  • Place the pork in a large pot; pour enough water into the pot to cover the pork. Stir the soy sauce and lemon juice into the water. Bring the mixture to a boil for 5 minutes. Remove the meat and set aside. Discard the liquid.
  • Refill the pot with fresh water; add the pork liver and bring to a boil for about 5 minutes. Remove the liver and allow to cool; cut into bite sized pieces. Set aside.
  • Heat 3 tablespoons olive oil in a large skillet over medium-high heat; fry the potatoes in the hot oil until golden brown and cooked through, 7 to 10 minutes. Remove the potatoes to a plate lined with paper towels. Add 2 more tablespoons olive oil to the skillet and allow to get hot. Stir the tomatoes into the mixture; cook together, stirring occasionally, another 5 minutes. Return the potatoes to the skillet with the green bell pepper. Season with salt and pepper. Cook and stir another 5 minutes.

1 1/2 lbs. pork (chopped)
1 big carrot (cut into wedges)
1 big potato (cut into wedges)
1 small red bell pepper (sliced)
1 small green bell pepper (sliced)
5 garlic cloves (chopped)
1 large onion (chopped)
3 pieces dried bay leaves (laurel)
1 cup beef or pork broth
Salt and pepper to taste
2 cups tomato sauce
1/2 cup water
2 tbsp cooking oil
Procedure:

Steps:

  • Heat the cooking oil in a pan and sauté the garlic and onions.

1 onion, peeled and chopped
2 cloves garlic, peeled and minced
3 pounds pork belly or pork butt, cut into 2-inch cubes
1 tablespoon fish sauce
1 cup tomato sauce
1 1/2 cups water
1 tablespoon tomato paste
salt and pepper to taste

Steps:

  • In a wide pan over medium-high heat, heat oil. Add potatoes and carrots and cook until lightly browned. Remove from pan and drain on paper towels.

2 Lbs of Pork belly or pork butt cut in 2×2 in. cubes
4 Medium sized potatoes, quartered
3 Medium carrots cut in 1 in. pieces
1 Large onion, diced
4 Cloves of garlic peeled and smashed
2 Small tomatoes, seeded and diced
2 Bay leafs
4 Tbs. Annatto seeds or atsuwete seeds
4 **4 Cups of tomato sauce
1 Cup of green peas (frozen is fine)
1/2 ½ Red bell pepper 1 in. diced
1/2 ½ Yellow bell pepper 1 in. diced
1/2 ½ Green bell pepper 1 in. diced
Salt & Pepper to taste
1/2 ½ Tbs. MSG (optional)
3 Tbs. Corn oil
** Use tomato paste if tomato sauce is not available.
(**3 Cups of water and 1 cup of tomato paste)

Steps:

  • In a large casserole dish heat 1 Tbs. of oil, season pork with salt, and brown on all sides. In another frying pan heat 2 Tbs. of corn oil and add annatto seeds until oil turns dark red. Using a strainer pour annatto seed oil onto the browned pork and let it sauté for about three minutes while stirring. Then add the following: garlic, tomatoes, onions, bay leaf, and tomato sauce. Stir and cover then let simmer over medium low heat for 10 minutes. Add msg and salt & pepper to taste. Next add carrots, cover, and let it simmer for another 3 minutes. Add the potatoes and let it cook for 12 minutes or until potatoes are tender stirring frequently to avoid scorching. After the potatoes are tender you may add the green peas, stir, and let it cook for 2 minutes. Then add the final ingredients the bell peppers.
