These cookies are very easy and quick to make and have excellent results. Very tasty and versatile, too, cause you can use any type of jam you prefer.

Time 25m

Yield 14 cookies

Number Of Ingredients 7

112 g butter
50 g powdered sugar
1 egg yolk
140 g flour
1 pinch salt
25 g granola cereal (without raisins) or 25 g chopped almonds
14 teaspoons of your favourite jam (I used cherry and apple jelly)

Steps:

  • Preheat the oven to 190°C/375°F.
  • Cream butter and sugar in a big bowl. Add the egg yolk. Sift in flour and salt and stir until just combined. Fold in granola cereal or nuts. Mix well.
  • Using your hands (if the dough is sticky, flour them lightly) take small lumps of dough and roll them into balls. Make an indentation into each ball using your fingers or the handle of a wooden spoon.
  • Fill each cookie with a ts of your favourite jam and bake for 12-15 minutes on a paper-lined baking sheet. The cookies should be slightly browned and the jam bubbly.

Tips:

  • Choose the right cookie dough. A good cookie dough for thumbprint cookies should be firm enough to hold its shape, but not too dry. If the dough is too dry, the cookies will be crumbly. If the dough is too wet, the cookies will spread too much in the oven.
  • Chill the dough before baking. Chilling the dough helps to firm it up and prevent the cookies from spreading too much in the oven. It also makes the dough easier to work with.
  • Use a variety of fillings. Thumbprint cookies can be filled with a variety of different fillings, such as jam, jelly, chocolate, peanut butter, or even Nutella. Get creative and experiment with different flavors!
  • Don't overfill the cookies. When filling the cookies, don't overfill them, or the filling will spill out while baking. A good rule of thumb is to fill the cookies only about halfway.
  • Bake the cookies until they are just set. The cookies are done baking when they are just set and the edges are just beginning to brown. If you overbake the cookies, they will be dry and crumbly.

Conclusion:

Thumbprint cookies are a delicious and easy-to-make treat that is perfect for any occasion. With a variety of different fillings to choose from, there is sure to be a thumbprint cookie that everyone will enjoy. So next time you're looking for a sweet treat, give thumbprint cookies a try!
