Time 40m

Number Of Ingredients 6

1/4 c butter (not oleo)
1 medium eggplant peeled cut in 3/4 in slices
1 large egg
1 tsp salt
1/8 tsp black pepper
1 c instant mashed potatoes

Steps:

  • 1. Preheat the oven to 450 degrees F (220 degrees C). Melt butter in a shallow baking dish (9X 13) in the oven while it is preheating. In a small bowl, mix together the egg, salt and pepper. Dip slices of eggplant into the egg mixture, then dip into the potato flakes to coat. Place the coated slices of eggplant into the hot buttered dish. Bake for about 20 minutes, or until tender, turning once after 10 minutes.

Tips:

  • Choose the right eggplant: Select firm, glossy eggplants with smooth, unblemished skin. Avoid eggplants that are too large or have brown spots, as these may be bitter.
  • Slice the eggplant evenly: Cut the eggplant into uniform slices to ensure even cooking. You can use a sharp knife or a mandoline slicer to achieve thin, consistent slices.
  • Soak the eggplant slices in water: Soaking the eggplant slices in cold water for 30 minutes helps to remove bitterness and reduce the amount of oil absorbed during frying.
  • Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet provides even heat distribution and prevents the eggplant from sticking. If you don't have a cast iron skillet, you can use a nonstick skillet.
  • Don't overcrowd the skillet: Cook the eggplant slices in batches to avoid overcrowding the skillet. This will help them to cook evenly and prevent them from becoming soggy.
  • Serve the eggplant warm: Tater-dipped eggplant is best served warm. You can sprinkle it with grated Parmesan cheese, chopped fresh herbs, or a squeeze of lemon juice for extra flavor.

Conclusion:

Tater-dipped eggplant is a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. With its crispy exterior and tender interior, it's sure to be a hit with everyone at the table. So next time you're looking for a new and exciting way to prepare eggplant, give this recipe a try. You won't be disappointed!
