If you own a barbecue joint like I do, you pretty much dream about barbecue in your sleep. Jalapeno poppers are also one of my favorite appetizers, and this recipe is a great way to combine those foods. They're very popular on the menu at my restaurant. Try your own variation by stuffing the peppers with cooked chicken or beef. -Taylor Hicks, Birmingham, Alabama

BEST EVER JALAPENO POPPERS

Best Ever Jalapeno Poppers image

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

Time 1h

Yield 32

Number Of Ingredients 8

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.

Yield 24 poppers

Number Of Ingredients 19

24 jalapeñoes
1 lb ground beef
1 oz taco seasoning, 1 package
2 teaspoons kosher salt, plus more to taste
1 teaspoon ground black pepper
¼ cup fresh cilantro, chopped
2 tablespoons extra virgin olive oil
1 medium white onion, diced
2 cloves garlic, minced
1 cup shredded cheese blend
½ cup cream cheese
4 eggs, beaten
1 ½ cups flour, mixed with 1 tsp salt and 1 tsp pepper
4 cups cornflake cereal, crushed
1 cup cornflake cereal, finely ground
8 cups canola oil
¼ cup fresh cilantro, chopped
1 tablespoon fresh lime juice, for seasoning
salsa, for serving

Steps:

  • Slice the jalapeños lengthwise down the center, taking care to cut through only one side and leaving the pepper as intact as possible. Remove the seeds.
  • In a large bowl, combine the ground beef, taco seasoning, salt, pepper, and cilantro. Mix to combine.
  • Heat the olive oil in a large pan over medium heat. Cook the onion for 1 minute, then add garlic and cook another minute.
  • Add the beef mixture and cook until browned, approximately 5 minutes. Remove from the heat and let cool completely.
  • In a clean, large bowl, combine the cooled beef mixture, shredded cheese, and cream cheese.
  • Transfer the beef mixture to a piping bag or zip-top bag with a corner snipped off.
  • Pipe the beef mixture into the jalapeños, then close the peppers.
  • Heat a large pot filled with the oil until it reaches 325ºF (170ºC).
  • Add the seasoned flour, eggs, and cornflakes to 3 separate shallow bowls. Dip the peppers in the egg, then the flour, followed by the egg again, and then the cornflakes. Dip once more in the egg and finish with a second dip in the cornflakes.
  • Fry the peppers, in batches, for 2½ minutes until golden brown. Remove with a slotted spoon or tongs and drain on a wire cooling rack.
  • Season the peppers well with salt and fresh lime juice.

Tips:

  • Choose the right jalapeños: Look for firm, plump jalapeños with smooth skin. Avoid any that are bruised or have blemishes.
  • Wear gloves when handling jalapeños: The capsaicin in jalapeños can irritate your skin, so it's important to wear gloves when handling them. If you do get capsaicin on your skin, wash it off immediately with soap and water.
  • Remove the seeds and ribs: To reduce the heat of the jalapeños, you can remove the seeds and ribs. Use a sharp knife to cut the jalapeños in half lengthwise and then scrape out the seeds and ribs with a spoon.
  • Stuff the jalapeños: You can stuff the jalapeños with a variety of fillings, such as cheese, meat, or vegetables. Be creative and experiment with different flavors.
  • Bread the jalapeños: To give the jalapeños a crispy coating, you can bread them before frying. Dip the jalapeños in flour, then egg, and then breadcrumbs.
  • Fry the jalapeños: Fry the jalapeños in hot oil until they are golden brown and crispy. Be careful not to overcrowd the pan, or the jalapeños will not cook evenly.
  • Serve the jalapeños: Serve the jalapeños immediately with your favorite dipping sauce.

Conclusion:

Jalapeño poppers are a delicious and easy-to-make appetizer that is perfect for any occasion. With a variety of fillings and coatings to choose from, you can customize jalapeño poppers to your own taste. So next time you're looking for a crowd-pleasing snack, give jalapeño poppers a try.
