Start with cheesy frozen broccoli & cheese sauce, and make these delicious broccoli and rice patties--perfect for a meatless entrée or a side to grilled or roasted meat.

1 box (10 oz) frozen broccoli & cheese sauce
2 tablespoons grated Parmesan cheese
1/2 teaspoon garlic salt
1/4 teaspoon red pepper sauce
2 cups cooked brown rice
1/2 cup marinara sauce

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil; spray with cooking spray.
  • Cook broccoli as directed on box; pour into medium bowl. With kitchen scissors, cut broccoli into 1/4- to 1/2-inch pieces. Add Parmesan cheese, garlic salt and pepper sauce; mix well. Stir in rice. Shape mixture into 4 patties, about 1/2 inch thick. Place on foil-lined cookie sheet.
  • Bake 15 minutes; turn. Bake 15 minutes longer or until light golden brown.
  • Meanwhile, heat marinara sauce. Serve with patties.

Number Of Ingredients 9

2 teaspoons vegetable oil (best to sub Olive or coconut oil instead)
2 garlic cloves, minced
1/2 onion, chopped
1 (12 ounce) bag frozen broccoli, defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs, beaten
salt or pepper

Steps:

  • preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil.
  • Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt/pepper to taste. Sauté until onions are garlic are tender, set aside to cool.
  • Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the onion and garlic and mix gently.
  • To the same bowl, add the panko, the cheeses, eggs, and salt/pepper to taste.
  • Mix together and form into patties, place on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
  • Bake in preheated oven for 30 minutes.

1 head broccoli, cut into flowerettes
1 head cauliflower, cut into flowerettes
2 (10 ounce) cans cream of mushroom soup or 2 (10 ounce) cans cream of chicken soup, undiluted
2 tablespoons mayonnaise
1 cup cheddar cheese, shredded
1/4 cup breadcrumbs
1/4 cup parmesan cheese
2 tablespoons butter, melted

Steps:

  • Put broccoli and cauliflower into a casserole dish.
  • Mix together soup, mayo and shredded cheese. Pour over top of veg mixture.
  • Mix together bread crumbs, Parmesan cheese and melted butter.
  • Pour over veg.
  • Bake at 350°F.
  • 45 minutes.
