3/4 lb lean ground beef
1/2 lb fresh or smoked chorizo sausage, diced
2 small anaheim chilies, seeded and chopped (New Mexico)
1 medium onion, chopped
1 1/2 teaspoons olive oil
1/2 lb potato, diced
2 garlic cloves, finely chopped
3 plum tomatoes, diced
1/2 teaspoon Mexican oregano, crumbled
1/4 teaspoon salt
4 burrito-size flour tortillas, warmed
salsa verde (optional)
sour cream (optional)

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat.
  • Add beef and chorizo; cook 3 to 4 minutes, until beef is no longer pink.
  • Transfer with slotted spoon to medium bowl.
  • Drain all but 1 tablespoon drippings from skillet.
  • Add chiles, onion and oil; cook 3 minutes.
  • Add potatoes; continue cooking 4 to 5 minutes, until potatoes start to brown.
  • Reduce heat to medium and cook about 4 minutes, until potatoes are tender.
  • Add garlic and cook 30 seconds, then tomatoes, oregano and salt.
  • Cook 3 to 5 minutes more, until thick.
  • Return beef mixture to skillet and heat through, 1 to 2 minutes more.
  • Divide and spoon filling down center of each tortilla.
  • Fold in sides and roll up.
  • Serve burritos with salsa verde and sour cream, if desired.
  • Makes 4 burritos.

1 lb. lean ground beef
1 1/4 cups finely chopped peeled potatoes
1/2 cup chopped onion (1 medium)
2 fresh or canned jalapeño chiles, seeded, chopped
1 (15-oz.) can spicy chili beans, undrained
1/4 teaspoon salt
1/8 teaspoon pepper
10 (10-inch) spinach or flour tortillas
6 oz. (1 1/2 cups) shredded Monterey Jack or Cheddar cheese
Old El Paso™ Thick 'n Chunky salsa, if desired
Sour cream, if desired

Steps:

  • Heat oven to 350°F. Lightly grease 13x-9-inch pan. In large skillet, cook ground beef, potatoes, onion and chiles over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked and vegetables are tender, stirring frequently. Drain.
  • Add beans, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer 5 minutes, stirring frequently.
  • Spoon 1/2 cup beef mixture in center of each tortilla. Sprinkle each with heaping 2 tablespoons cheese. Roll up each tortilla, enclosing filling; fold ends under. Place seam side down in greased pan; cover with foil.
  • Bake at 350°F. for 10 to 12 minutes or until thoroughly heated. Serve burritos with salsa and sour cream.

Quick and easy spicy bean burritos that the whole family will enjoy! Tex-Mex is a highly spiced and vibrant style of cooking that developed as an evolution of Northern Mexican cuisine. These burritos are fairly spicy with 1/2 tbsp chili powder and medium salsa. Feel free to increase the chili powder if using a milder salsa. I also use whole-wheat tortillas for extra fibre. These freeze well.

1 (14 ounce) can vegetarian baked beans, in tomato sauce
1/2 tablespoon chili powder
1/2 teaspoon oregano
1/2 teaspoon cumin
64 inches flour tortillas
1/2 cup part-skim mozzarella cheese, shredded (approx amount)
1/2 cup low-fat cheddar cheese, shredded (approx amount)
1/2 cup salsa (approx amount)
1/2 cup pepper, chopped (optional)
1/4 cup nonfat sour cream (optional)

Steps:

  • In a food processor, process beans and seasonings until smooth.
  • Spread out the 8 tortillas; add an equal amount of the bean mixture in the center of each tortilla.
  • On top of the bean mixture on each tortilla, add a sprinkle of mozzarella and cheddar cheese, some salsa, chopped pepper, and sour cream.

Anyhow, here's my lower in fat version of a dish I simply can't live without. You can use pre-prepared beans and rice or give it your own flair by making them from scratch. Add or omit ingredients as you like to create your own perfect burrito!

3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
1 teaspoon ground cumin
1 (14 ounce) can fat-free chicken broth
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 cups fat-free refried beans
1 1/2 cups Spanish rice
1 1/4 cups low-fat cheddar cheese (separated) or 1 1/4 cups Mexican blend cheese (separated)
2 large flour tortillas (12-inch or larger)
diced onion (optional)
shredded lettuce (optional)
diced tomatoes (optional)
canned jalapeno, sliced (optional)
low-fat sour cream (optional)
diced avocado (optional)

Steps:

  • Preheat oven to 350F.
  • Prepare sauce: Heat canola oil in saucepan; stir in flour and chili powder to form thick paste; cook 30-60 seconds.
  • Add chili powder, cumin, broth, tomato sauce, salt, & garlic powder. Bring to a boil, reduce heat, & simmer 8-10 minutes. Set aside.
  • Assemble burritos: Lay out one tortilla. Spoon 3/4 c refried beans, 3/4 c spanish rice, and 1/2 c cheese down center of tortilla.
  • To roll , fold one side over filling, parallel to filling. Fold up bottom & top then fold over other side to make a wide burrito.
  • Place seam side down in large baking dish. Repeat steps 3 & 4 for second burrito.
  • Pour sauce over burritos and top with 1/4 c cheese.
  • Bake 25-30 minutes.
  • Remove from oven and pile on the desired toppings.
  • Burritos can be cut in half and serve 4 people, or can be served whole to two *really* hungry people.

6 large eggs, lightly beaten
1 (4 1/2 ounce) can chopped green chilies, undrained
picante sauce
shredded cheddar cheese
4 8-inch flour tortillas

Steps:

  • Brown sausage in a large skillet, stirring to crumble.
  • Drain and return to skillet.
  • Add eggs and chilies to sausage.

1 onion, sliced
1/2 lb fresh mushrooms, sliced
2 tablespoons kraft extra virgin olive oil aged balsamic vinaigrette dressing
1/2 cup salsa
3/4 cup kraft tex mex shredded cheese, divided
4 flour tortillas, warmed (10 inch)

Steps:

  • Heat oven to 350.
  • In large saute pan over medium heat.
  • saute vegetables in the salad dressing until just cooked.
  • add salsa and heat through.
  • add 1/2 cup of the cheese.
  • stir until melted.
  • lay tortillas on flat surface.
  • divide veg mixture among them.
  • fold each into burritos.
  • Place on cookie sheet lined with parchment paper.
  • sprinkle remaining cheese over.
  • bake for 15-20 min or until just crisp.
