1-1/2 pounds lean ground beef (90% lean)
1 medium sweet red pepper, chopped
1 small onion, chopped
1 can (14-1/2 ounces) diced tomatoes, drained
1-1/3 cups frozen corn, thawed
1 can (8 ounces) tomato sauce
2 tablespoons chili powder
1/2 teaspoon salt
1 package (8.8 ounces) ready-to-serve brown rice
20 taco shells, warmed
Optional toppings: shredded lettuce, chopped fresh tomatoes and reduced-fat sour cream

Steps:

  • In a Dutch oven, cook beef, red pepper and onion over medium heat until beef is no longer pink and vegetables are tender, breaking beef into crumbles, 8-10 minutes. 1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.

2 pounds ground round
1 teaspoon canola oil
1/4 cup white onion, finely chopped
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon ground cumin
2 tablespoons chili powder
1/2 teaspoon oregano
1 to 2 fresh jalapeño peppers, stemmed, seeded and finely chopped
1-1/2 cup tomato sauce
12 taco shells
Shredded green leaf or iceberg lettuce
Finely chopped and seeded ripe tomato
Shredded Longhorn cheese
Sour cream

Steps:

  • Preparation: Preheat oven to 200°F degrees. In a large skillet over medium heat, brown the meat in the oil. Pour off any excesss oil. (If you're using ground round, there shouldn't be any excess, but drain whatever is there.) Add the onion, garlic, salt, pepper, spices, jalapeños and tomato sauce, and stir well. Lower heat, cover and simmer for 10 minutes. While filling is simmering, heat the taco shells in the preheated oven. Fill hot taco shells with meat mixture, and top with shredded lettuce, chopped tomatoes and grated cheese. Serve with sour cream, if desired.

2 lbs ground beef
1 teaspoon salt
1 -2 tablespoon chili powder
2 tablespoons paprika
1 teaspoon cumin
1 -2 teaspoon garlic powder
1/2 green bell pepper, diced
1/2 cup onion, diced
12 corn tortillas (Packaged or Homemade)
lettuce (Plus other toppings listed below)

Steps:

  • In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
  • Bring to a boil.
  • Simmer for about an hour.
  • Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
  • Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
  • Full Corn Tortilla Shells just about 1/2 way full or desired amount.
  • Put into a preheated oven (300) for about 10 minutes or until completed heated through.

1 tablespoon corn oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 garlic cloves, chopped
1 tablespoon plus 1 teaspoon ground cumin
1 pound lean ground beef
1/2 cup tomato sauce
1/4 cup raisins
1/4 cup pecan pieces
1/4 cup chopped fresh cilantro
12 taco shells or soft 6-inch-diameter corn tortillas
Shredded lettuce
Grated cheddar cheese
Chopped fresh tomatoes

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion, bell pepper and garlic and sauté until soft, about 5 minutes. Add cumin and stir 1 minutes.
