EASY MEXICAN PORK BURRITOS

Easy Mexican Pork Burritos image

Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

Time 3h

Yield 20

Number Of Ingredients 12

3 pounds bone-in pork shoulder roast
1 onion, sliced
6 cloves garlic, chopped
1 (1.25 ounce) package taco seasoning mix
6 cups water, or as needed to cover
1 (14.5 ounce) can diced tomatoes
1 (16 ounce) can refried beans
1 (4 ounce) can chopped green chiles, or to taste
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
20 (10 inch) flour tortillas
¼ cup vegetable oil, divided

Steps:

  • Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
  • Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
  • Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
  • Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

Time 13h30m

Yield 12

Number Of Ingredients 15

6 pounds pork spareribs
1 ½ cups white sugar
¼ cup salt
2 ½ tablespoons ground black pepper
3 tablespoons sweet paprika
1 teaspoon cayenne pepper, or to taste
2 tablespoons garlic powder
5 tablespoons pan drippings
½ cup chopped onion
4 cups ketchup
3 cups hot water
4 tablespoons brown sugar
cayenne pepper to taste
salt and pepper to taste
1 cup wood chips, soaked

Steps:

  • Clean the ribs, and trim away any excess fat. In a medium bowl, stir together the sugar, 1/4 cup salt, ground black pepper, paprika, 1 teaspoon cayenne pepper, and garlic powder. Coat ribs liberally with spice mix. Place the ribs in two 10x15 inch roasting pans, piling two racks of ribs per pan. Cover, and refrigerate for at least 8 hours.
  • Preheat oven to 275 degrees F (135 degrees C). Bake uncovered for 3 to 4 hours, or until the ribs are tender and nearly fall apart.
  • Remove 5 tablespoons of drippings from the bottom of the roasting pans, and place in a skillet over medium heat. Cook onion in pan drippings until lightly browned and tender. Stir in ketchup, and heat for 3 to 4 more minutes, stirring constantly. Next, mix in water and brown sugar, and season to taste with cayenne pepper, salt, and pepper. Reduce heat to low, cover, and simmer for 1 hour, adding water as necessary to achieve desired thickness.
  • Preheat grill for medium-low heat.
  • When ready to grill, add soaked wood chips to the coals or to the smoker box of a gas grill. Lightly oil grill grate. Place ribs on the grill two racks at a time so they are not crowded. Cook for 20 minutes, turning occasionally. Baste ribs with sauce during the last 10 minutes of grilling, so the sauce does not burn.

Provided by BecR2400

Categories     Lunch/Snacks

Time 52m

Yield 4 burritos

Number Of Ingredients 13

3/4 lb lean ground beef
1/2 lb fresh or smoked chorizo sausage, diced
2 small anaheim chilies, seeded and chopped (New Mexico)
1 medium onion, chopped
1 1/2 teaspoons olive oil
1/2 lb potato, diced
2 garlic cloves, finely chopped
3 plum tomatoes, diced
1/2 teaspoon Mexican oregano, crumbled
1/4 teaspoon salt
4 burrito-size flour tortillas, warmed
salsa verde (optional)
sour cream (optional)

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat.
  • Add beef and chorizo; cook 3 to 4 minutes, until beef is no longer pink.
  • Transfer with slotted spoon to medium bowl.
  • Drain all but 1 tablespoon drippings from skillet.
  • Add chiles, onion and oil; cook 3 minutes.
  • Add potatoes; continue cooking 4 to 5 minutes, until potatoes start to brown.
  • Reduce heat to medium and cook about 4 minutes, until potatoes are tender.
  • Add garlic and cook 30 seconds, then tomatoes, oregano and salt.
  • Cook 3 to 5 minutes more, until thick.
  • Return beef mixture to skillet and heat through, 1 to 2 minutes more.
  • Divide and spoon filling down center of each tortilla.
  • Fold in sides and roll up.
  • Serve burritos with salsa verde and sour cream, if desired.
  • Makes 4 burritos.

Tips:

  • Choose the right pork: Pork shoulder (also called pork butt) is the best cut of meat for carnitas. It's a tough cut of meat, but it becomes tender and juicy when cooked slowly.
  • Season the pork well: A good spice rub is essential for flavorful carnitas. Be sure to use a combination of spices that you enjoy, such as chili powder, cumin, garlic powder, and onion powder.
  • Cook the pork slowly and shred it: Carnitas is traditionally cooked in a slow cooker or braising pan. This allows the meat to become tender and fall apart easily. Once the pork is cooked, shred it with two forks.
  • Make a flavorful sauce: A good sauce is essential for tying all the flavors of the carnitas together. You can make a simple sauce by combining diced tomatoes, onions, and peppers in a saucepan and simmering until the vegetables are soft.
  • Assemble the burritos: To assemble the burritos, place a tortilla on a flat surface. Spread some refried beans on the tortilla, then top with carnitas, sauce, and your favorite toppings. Fold the tortilla in half or roll it up, and enjoy!

Conclusion:

Texas pork burritos are a delicious and easy-to-make meal that is perfect for any occasion. With a few simple ingredients and a little time, you can create a burrito that is sure to please everyone at your table. So next time you're looking for a quick and tasty meal, give Texas pork burritos a try!
