- Place a steamer or colander coated with cooking spray over a pan of boiling water and cover with the lid or firmly sealed with foil.
- In a large bowl, combing the egg, chicken mince, breadcrumbs, ginger, lemongrass and coriander.
- Mix well using your hands.
- Form spoonfuls of the mixture into 24 balls.
- Place in the steamer, cover and cook for 10 mins or until cooked though.
- While chicken balls are cooking, combine the fish sauce, lime juice, garlic, chili and sugar.
- Place in small bowls for dipping.
- Remove the balls from the steamer and serve accompanied by the dipping sauce.
- Enjoy.

- 1) Pre heat oven to 200c 2) Mix the mince and breadcrumbs in a large bowl 3) Add the spring onions, ground coriander, fresh coriander chilli sauce and lemon juice and mix well 4) Using damp hands, form the mixture into evenly shaped balls that are either small enough to eat with your fingers or large enough to use as burgers 5) Heat the oil in a large non-stick frying pan and cook the chicken balls over high heat until browned all over 6) Drain well on paper towels and then place them on a baking tray and bake until cooked through (small chicken balls will take ~5 minutes to cook and larger ones will take 10-15 minutes)
