My mother introduced me to this recipe and it is wonderful! So easy and delicious, a perfect spicy appetizer!

5 pounds frozen chicken wings
1 cup chicken broth
½ cup white sugar
¼ cup fish sauce
¼ cup crushed garlic
¼ cup finely chopped jalapeno chile peppers
2 tablespoons cornstarch
3 teaspoons paprika
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken wings on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown. Move to serving dish/platter.
  • In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over crispy chicken wings. Enjoy!

1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon hot chili-garlic sauce, such as sriracha
2 teaspoons dark sesame oil
1 teaspoon grated fresh ginger
16 chicken wings, wing tips removed
vegetable oil
kosher salt
fresh ground black pepper

Steps:

  • Make the glaze, in a small bowl, whisk the sauces, sesame oil and ginger together.
  • Trim excess skin from the edges of the wings.
  • Lightly brush or spray with the oil, and season with salt and pepper to taste.
  • Grill the chicken wings over Direct Medium heat until the skin begins to crisp, about 10 minutes, turning once or twice.
  • Brush the wings with the glaze and continue to grill until the meat is no longer pink at the bone, 8 to 10 minutes, turning and brushing with the glaze 2 or 3 times.
  • Serve warm.

2 pounds chicken wings (about 10)
2 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
1 teaspoon salt
1 tablespoon vegetable oil
1 teaspoon dried hot red pepper flakes
1/3 cup light corn syrup
1/2 cup distilled white vinegar

Steps:

  • Cut off the wings tips, reserving them for another use such as stock if desired, and halve the wings at the joint. In a heavy-duty resealable plastic bag toss the wings with the garlic paste and the oil to coat them well and let them marinate, chilled, for at least 6 hours or overnight. Drain the wings and pat them dry. Arrange the wings, skin side up, on the oiled rack of a broiler pan, sprinkle them with salt and pepper to taste, and broil them under a preheated broiler about 4 inches from the heat for 8 to 10 minutes, or until they are golden brown. Turn the wings, sprinkle them with salt and pepper to taste, and broil them for 5 to 8 minutes more, or until they are golden. While the wings are broiling, in a saucepan stir together the red pepper flakes, the corn syrup, and the vinegar, bring the liquid to a boil, stirring, and transfer it to a bowl. Serve the wings with the sauce.

5 lbs chicken wings (12-24)
2 tablespoons soy sauce
2 tablespoons fish sauce
4 -5 garlic cloves, minced
3 tablespoons Thai sweet chili sauce
2 tablespoons brown sugar
1 tablespoon lime juice
2 tablespoons oyster sauce
1 tablespoon ketchup
1 fresh red chili, chopped (OR 3/4 to 1.5 tsp. dried crushed chili, to taste)

Steps:

  • Mix all 'Marinade' ingredients together in a small bowl. Stir well to dissolve sugar.
  • Place wings in a large bowl and pour sauce over. Stir well to coat chicken with sauce. Allow wings to marinate 10 minutes or longer while you heat up the grill (up to 24 hours).
  • Grill the wings, basting them once each side with some of the leftover marinade from the bottom of the bowl. OR cook them in your oven (see next instructions).
  • To Cook Wings Indoors: Place wings in a baking dish and bake in a preheated oven at 350 degrees for 30 minutes. Then turn oven to "Broil" setting. Transfer wings to baking sheet and place wings on one of the higher racks in your oven. Watch the wings carefully, as they can easily burn. Turn them every 5 minutes for 15-20 minutes, or until glossy and browned. Baste them once with leftover marinade from the bottom of the bowl.

1/2 cup fresh lime juice
2 tablespoons nam pla (Thai fish sauce)
3 cloves garlic, crushed
2 fresh red Thai chiles, thinly sliced
1 tablespoon sugar
2 pounds chicken mini drumsticks from chicken wings or chicken wings, separated at the joint
1 ripe mango, cut into 1-inch slices
2 teaspoons salt
Grape seed or corn oil, for frying
1/2 cup cornstarch
1/2 cup rice flour
1/4 cup chopped fresh mint leaves
Hot-and-Sour Sauce

Steps:

  • In a medium saucepan, combine soy sauce, lime juice, nam pla, garlic, chiles, and sugar. Bring to a boil over medium heat, stirring occasionally. Let cool completely.
  • Place drumsticks in a shallow baking dish. Pour over soy sauce mixture and toss until chicken is well coated. Cover with plastic wrap and refrigerate at least 1 hour.
  • Meanwhile, in a small bowl, toss mango slices with salt. Let stand 30 minutes.
  • Add enough oil to a deep, heavy-bottomed pot to reach a depth of 3 inches. Heat oil over medium-high heat until it reaches 375 degrees on a deep-fry thermometer. Remove chicken from marinade and pat dry.
  • In a shallow dish, mix together cornstarch and rice flour. Working in batches, dredge chicken in cornstarch mixture and carefully add to hot oil. Cook until crisp, browned, and cooked through, about 10 minutes, adjusting heat as necessary to maintain temperature.
  • Transfer chicken to a paper towel-lined plate to drain. Place hot-and-sour sauce in a large bowl; add chicken and toss to coat. Serve immediately with salted mango and mint leaves.

1/2 cup sweet chili sauce
1/4 cup lime juice
1/4 cup fresh cilantro or 1/4 cup parsley, lightly packed
1 tablespoon red curry paste
2 garlic cloves, minced (or 1/2 tsp powder)
1 teaspoon finely grated gingerroot, peeled
3 lbs whole chicken wings, split in half and tips discarded (or chicken drumettes)

Steps:

  • Curry Marinade: Process first 7 ingredients in blender or food processor until smooth. Makes about 1 cup marinade.
  • Put wings into large resealable freezer bag. Pour marinade over top, seal bag. Turn until coated.
  • Marinate in refrigerator for at least 6 hours or overnight, turning occasionally.
  • Discard marinade.
  • Arrange wings pieces in single layer on greased wire racks set in 2 foil lined baking sheeets.
  • Bake in 350 degree oven for about 1 hour, switching positions of baking sheets half way through, until wing pieces are tender.

THAI HONEY - GARLIC CHICKEN WINGS

This is a version that I came up with after I became bored with just the regular honey glazed wings I was so used to seeing everywhere. You will need a 12 step program to stop eating these ! My husband will testify to this. You can't stop at one & I warn you...these are highly addictive. Enjoy.

1 1/2 kg chicken wings
2 Tbsp thai garlic chili sauce
4 Tbsp lime juice
1/4 c vegetable oil
1 pinch salt and pepper
3 c all purpose flour
2 Tbsp ginger ( grated )
2 tsp mushroom soya sauce available
1/2 c brown sugar
1/4 c honey
2 clove garlic ( finely minced )
3/4 c rice wine vinegar
2 tsp toasted sesame seeds ( white or black )

Steps:

  • 1. Take the chicken wings & split them . Discard the tips . I try to buy them already done . Next in a large bowl or extra large ziplock bag , add the vegetable oil, half the lime juice, garlic, ginger, thai garlic chili sauce, & salt & pepper. Mix ingredients together. Next add the chicken wings to marinade . Place covered in the bowl , or place the sealed ziplock bag in the refrigerator. Let sit for at least 1 hour. ( It's better if it's left overnight.)
  • 2. Once the chicken has marinated for 1 hour , remove from the refrigerator & if not already in a ziplock bag , tranfer to one. Add the flour to the bag & shake the wings until they are thoroughly coated. ( No wet spots. )
  • 3. Preheat the oven to 400 degrees fahrenheit or 200 Celsius . Use a large baking sheet & lightly oil. Next shake off the excess flour on the wings & arrange them on the baking sheet. Try not to crowd the pan . Bake for 25 - 30 minutes on each side until golden.
  • 4. When the wings are baking for the 2nd half hour get a sauce pan ready for the glaze. Add to the saucepan the rice wine vinegar, the rest of the garlic , ginger, lime , & thai garlic chili sauce. Next , add the brown sugar & honey & whisk together. On medium high heat , slowly bring to a boil. Once the glaze starts to boil, bring the heat down to simmer for 10 minutes then turmn off the heat & let the glaze cool down slightly.
  • 5. When the wings are done take them out of the oven & slowly pour the glaze to coat all the wings. Place UNCOVERED in the oven ( heat off ) & let them sit for about 3-5 minutes until glaze is absorbed a little bit. Sprinkle with sesame seeds (optional ) & serve immediately with rice or fries or nothing at all . Take them for lunch the next day too. But you may have to share. Enjoy.

1/3 cup dry sherry or Progresso™ chicken broth (from 32-oz carton)
1/3 cup oyster sauce
1/3 cup honey
3 tablespoons chopped fresh cilantro
2 tablespoons chili sauce
2 tablespoons grated lime peel
4 medium green onions, chopped (1/4 cup)
3 cloves garlic, finely chopped

Steps:

  • Cut each chicken wing at joints to make 3 pieces; discard tip. Cut off excess skin; discard.
  • In resealable heavy-duty food-storage plastic bag or large glass bowl, mix remaining ingredients. Reserve 1/4 cup of marinade to a small bowl and set aside; add chicken to marinade in bag; turn to coat. Seal bag or covered dish; refrigerate, turning once, at least 1 hour.
