2 tablespoons lemon juice (half of a lemon)
1/4 cup reduced-fat peanut butter
1 garlic clove
1/8 cup fresh parsley leaves

Tips:

  • For the best flavor, use fresh, ripe tomatoes. Roma tomatoes are a good choice because they have fewer seeds and less juice.
  • If you don't have time to roast the tomatoes, you can use canned diced tomatoes. Just be sure to drain them well before using.
  • Use a good quality olive oil. This will help to bring out the flavor of the tomatoes and other ingredients.
  • Don't be afraid to experiment with different spices. Thai curry powder is a good starting point, but you can also add other spices like cumin, coriander, and turmeric.
  • Serve the hummus with your favorite dippers. Vegetables, crackers, and pita bread are all good choices.
  • Conclusion:

Thai curry hummus is a delicious and versatile dip that is perfect for any occasion. It's easy to make and can be customized to your own taste. So next time you're looking for a new and exciting dip, give this recipe a try. You won't be disappointed!
