2 tablespoons oil
1 teaspoon garlic, minced
6 oz. (170 g) chicken breast, cut into strips
1 cup bamboo shoots, sliced into thin pieces
1 red chili, sliced into thin strips
1 cup fresh mint leaves
1 squirt lime juice
2 tablespoons fish sauce
1 teaspoon sugar or to taste
2 teaspoons chili sauce, I used Rooster brand chili garlic sauce
4 tablespoons thick coconut milk or coconut cream

Steps:

  • Mix the Sauce ingredients in a small bowl and set aside.
  • Heat up a wok with cooking oil and add garlic until aromatic.
  • Add in the chicken and stir-fry for a couple of minutes, add the bamboo shoots, chili, and mint leaves and stir fry until the chicken is cooked.
  • Add the Sauce and stir evenly. Add a few squirts of lime juice, dish out and serve with steamed rice.

1 pound boneless skinless chicken thighs, cut into 1-inch pieces
1 medium carrot, diced
1 celery rib, chopped
1 teaspoon minced fresh gingerroot
1 large garlic clove, minced
1 can (28 ounces) diced tomatoes
1 can (13.66 ounces) light coconut milk
1 tablespoon red curry paste
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup frozen shelled edamame, thawed
2 cups fresh baby spinach
1 green onion, minced
1/2 teaspoon grated lemon zest
Fresh cilantro leaves
Dry roasted peanuts

Steps:

  • In a large saucepan, heat sesame oil over medium heat. Add chicken, carrot and celery; cook and stir until vegetables are slightly softened, 3-4 minutes. Add ginger and garlic; cook 1 minute more., Stir in tomatoes, coconut milk, curry paste, salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 10 minutes. Add edamame; cook 5 minutes more. 1 tablespoon sesame oil
1 ¼ pounds skinless, boneless chicken breast, diced
2 large carrots, diced
1 tablespoon olive oil
1 small onion, diced
1 bunch scallions, sliced, white and green parts divided
3 large cloves garlic, chopped
2 tablespoons minced fresh ginger
1 (14 ounce) can coconut milk
½ cup peanut butter
¼ cup water, or more to taste
2 tablespoons Sriracha sauce
1 medium lime, juiced
½ teaspoon salt
1 (14 ounce) can great northern beans, drained
8 leaves basil, chopped

Steps:

  • Heat sesame oil in a large skillet over medium-high heat. Add chicken and cook in batches, if necessary, until nicely browned, 5 to 7 minutes.
  • At the same time, heat a small amount of water to boiling in a small saucepan. Add carrots and boil until just starting to get tender, about 2 minutes. Drain.
  • Heat olive oil in a large pot over medium-high heat; stir in onion, white parts of scallions, garlic, and ginger. Cook and stir until the onion has softened and turned translucent, about 5 minutes.

2 tablespoons olive oil
2 lbs. ground chicken
2 large onions, diced
3 cloves garlic, small diced
2 poblano peppers, diced
2 jalapeno peppers, diced
2 (4.25 oz) cans diced green chilis
1 tablespoon cumin
2 tablespoons chili powder
2 teaspoons salt
3/4 cup light beer
1 cup chicken broth
1/2 cup smooth peanut butter
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 teaspoons sriracha
2 (15.5 oz) cans small white beans, drained and rinsed

Steps:

  • In a large dutch oven, heat the olive oil over medium heat, then add the onions, garlic, both peppers and the chilis.
  • Cook for 8-10 minutes, stirring until softened.
  • Push the onion and peppers over to one side of the pot and then add in the ground chicken to brown.
  • Once the chicken is browned through, stir together with the peppers and onions.
  • Add the cumin, chili powder and salt then stir to combine.
  • Pour in the beer to deglaze the pot, scraping up the bottom as you stir.
  • Next pour in the chicken broth, Worcestershire sauce, soy sauce, sriracha and oyster sauce then stir.
  • Stir in the peanut butter until it's completely mixed into the chili.
  • Add the beans in, stir and let simmer uncovered for 45 minutes to an hour.

½ cup coconut milk
2 tablespoons fish sauce
2 tablespoons minced garlic
2 tablespoons chopped cilantro
1 teaspoon ground turmeric
1 teaspoon curry powder
½ teaspoon white pepper
½ (3 pound) chicken, cut into pieces
6 tablespoons rice vinegar
4 tablespoons water
4 tablespoons white sugar
1 teaspoon minced garlic
½ teaspoon minced bird's eye chile
¼ teaspoon salt

Steps:

  • In a shallow dish, mix together the coconut milk, fish sauce, 2 tablespoons minced garlic, cilantro, turmeric, curry powder, and white pepper. Add chicken, and turn to coat. Cover, and refrigerate for 4 hours or overnight.
  • Preheat grill for high heat.
  • In a saucepan, combine vinegar, water, sugar, 1 teaspoon minced garlic, bird's eye chile, and salt; bring to a boil. Reduce heat to low, and simmer until liquid is reduced, about 5 minutes. Stir sauce from time to time. Remove from heat and allow to cool before use.
  • Lightly oil grill grate. Discard marinade, and place chicken on the grill. Cook for 10 minutes per side, or until slightly charred and juices run clear. Brush with sauce before serving. Serve remaining sauce on the side for dipping.

4 slices fresh ginger, quarter-size, 1/4 inch thick, minced
1 (14 ounce) can coconut milk
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
2 pieces lemongrass (2-inch pieces )
8 skinless chicken thighs (I use boneless,skinless)
1/2 cup flaked coconut
1 bunch fresh cilantro, chopped
4 scallions, green parts included, chopped
1 jalapeno, seeds included
2 tablespoons packed brown sugar
1/2 teaspoon rice vinegar or 1/2 teaspoon cider vinegar
1/2 teaspoon salt
1 cup honey
1/3 cup dry roasted salted peanut, finely chopped

Steps:

  • Combine the ginger, coconut milk, salt and pepper in a large zip-lock bag. Add lemon grass. Place the chicken thighs in the mixture and refrigerate overnight.
  • Make the Honey-Chili Glaze: In a food processor, chop together the jalapeno and brown sugar. Scrape into a small saucepan. Add the venegar, salt, and honey and bring to a boil. Simmer over very low heat for about 2 minutes. Stir in the peanuts.
  • Prepare a charcoal grill to medium heat or preheat the broiler.
  • Drain the chicken and cook about 8-10 minutes on each side, depending on the size of the thighs and the heat. Grill until chicken is cooked through (careful not to over cook.).
