2 tablespoons dry roasted peanuts, chopped (optional)

Dressing:
3 tablespoons agave nectar or honey
2 tablespoons creamy or chunky natural peanut butter
2 tablespoons hot water
1 tablespoon reduced-sodium soy sauce

1/2 teaspoon shrimp paste
10 cloves garlic
8 medium red chiles, such as Fresno
4 small shallots, halved
1 Sri Lankan (kaffir) lime leaf, torn into pieces (see Cook's Note)

4 tablespoons canola oil
2 pounds flank steak, thinly sliced against the grain

Return the skillet to the stovetop over medium-low heat. Add 1/3 cup water and bring to a boil, scraping with a wooden spoon to release any brown bits.
