3 1/2 pounds beets (4 pounds with green attached, reserving greens for another use), scrubbed and trimmed, leaving about 1 inch of stems attached

2 tablespoons pure maple syrup or honey

THANKSGIVING BEETS

Thanksgiving Beets image

A delicious side dish that can be frozen and used later, if you like. Just cook them, then bag them up for the freezer. You can cut this recipe in half if you like with no problem. You can also use canned beets, substituting the beet juice in the can for the water.

Categories     Side Dish     Vegetables

Time 30m

Yield 4

Number Of Ingredients 9

2 pounds beets, peeled and sliced
3 tablespoons brown sugar
3 tablespoons vinegar
¼ cup water
1 tablespoon cornstarch
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
2 tablespoons butter

Steps:

  • Place the beets into a large saucepan. Pour in enough water to cover the beets by 1 inch. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the beets are easily pierced with a fork, about 10 minutes; drain.
  • Whisk together the brown sugar, vinegar, water, cornstarch, cinnamon, nutmeg, and cloves in a saucepan. Add the beets and the butter, turn the heat to medium, and cook, stirring constantly, until the mixture comes to a boil. Cook until the sauce thickens slightly, about a minute or two. The sauce will not be sticky-thick, but will still pour nicely. Serve beets hot or cold.

REALLY BIG BEETS

Really Big Beets image

Here is a show-stopping main course to please vegans and vegetarians - and one that even meat-eaters will want to eat. Diana Jarvis, a Manhattan resident who submitted this recipe to the Well blog's Vegetarian Thanksgiving feature in 2014, says to roast the beets for a long time, to achieve a giant, steak-like fist of vegetable, rich and salty-sweet. One hour works - two hours is better.

ROASTED BEETS WITH GINGER

Roasted Beets With Ginger image

I have no idea where Mom found this recipe but she sent it to me and asked me to prepare it for Thanksgiving. We enjoyed it immensely, so much so I'm posting it to share.

Provided by justcallmetoni

Categories     Vegetable

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 lbs beets (about 6 small to medium beets)
1 1/2 tablespoons extra virgin olive oil
1 1/2 tablespoons finely grated ginger
2 tablespoons balsamic vinegar
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Carefully scrub the beets clean trimming off the leaves and the long root tip. Tightly wrap beets in aluminnum foil and place in oven for 40-50 minutes or until the beets are tender and the skin is loose. Remove from oven and cut a slit in the foil to allow the steam to escape.
  • Allow the beets to cool enough so that you can handle them. Trim the ends and peel the skin. The skin should slip of quite easily. If not then perhaps the beets need a bit more cooking. Cut the peeled beets into sixths or eighths - depending on the size of your beets.
  • Heat oil under medium low heat. Add ginger and cook one or two minutes. Keep the heat low as you are looking to release the flavor. If your ginger sizzles or browns, then your heat is too high. Add the beets and cook two or three minutes. Add balsamic vinegar and cook another minute or so. The oil, vinegar and ginger should create nice glaze covering the beets.
  • Serve and enjoy.

Tips:

  • Choose the Right Beets: Select firm, deep-colored beets that are about 2-3 inches in diameter. Avoid beets with blemishes or bruises.
  • Prepare Beets Properly: Scrub beets thoroughly under running water. Trim the tops and roots, leaving about an inch of stem intact.
  • Roast Beets to Perfection: Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper. Wrap each beet individually in aluminum foil and roast for 45-60 minutes, or until tender when pierced with a fork.
  • Use Fresh Herbs and Spices: Enhance the flavor of beets by adding fresh herbs like thyme, rosemary, or sage. Sprinkle with ground cumin, coriander, or paprika for a warm and earthy taste.
  • Add Sweetness and Acidity: Balance the earthy flavor of beets with a touch of sweetness from honey, maple syrup, or balsamic vinegar. A squeeze of lemon juice or orange zest can also brighten up the dish.
  • Experiment with Different Cooking Methods: Besides roasting, you can also boil, steam, or pickle beets. Each method offers a unique texture and flavor profile.
