- In a large bowl, dissolve cherry gelatin and sugar in boiling cranberry juice. Add the ice cubes; stir until dissolved. Refrigerate until thickened, about 45 minutes. , Fold in the celery, pear, cranberries and 1/2 cup walnuts. Transfer to a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until firm, about 50 minutes., Meanwhile, in another bowl, dissolve lemon gelatin in water. Refrigerate until slightly thickened, about 35 minutes. Whisk in 1/4 cup mayonnaise; fold in the remaining mayonnaise. Fold in half of the whipped topping. Carefully spoon over cherry layer. Refrigerate until firm, about 45 minutes. , Spread with remaining whipped topping. Sprinkle with remaining walnuts. Refrigerate for at least 3 hours. Cut into squares.

- Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
- Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

CRANBERRY MOLDS
Steps:
- In a medium saucepan, bring the cranberry juice to a boil. Transfer to a medium mixing bowl and pour in the gelatin. Stir until gelatin is completely dissolved. Stir in vodka. Chill 1 1/2 to 2 hours in the refrigerator until it begins to set. Stir in remaining ingredients. Divide into 12 (4-ounce) molds. Refrigerate at least 4 hours to set.
- Remove from molds by first running the tip of a sharp knife around the edge of the mold to loosen side. Then dip the bottom of mold in a bowl of warm water. Invert onto a plate. Serve garnished with fresh cranberries and a sprig of fresh mint
MOM'S THANKSGIVING CRANBERRY JELLO MOLD
A MUST for us! A neighbor in Omaha had given this to my Mom in the early'60's and she has made it every Thanksgiving since. Now I make the holiday, so I make the mold! It's very easy. Keep in mind that this has walnuts just in case you have guests who are allergic to nuts. Enjoy! *You can make this 2 days before serving so I will make it on the Tuesday before Thanksgiving and keep it in the mold in the refrigerator and just unmold it before serving.

- In a large bowl, dissolve the packages of jello in the hot water.
- Add the cold water and the cranberry sauce. Blend well and chill.

This Cranberry Jello Salad is delicious and festive looking! Raspberry jello, cranberry sauce, apples and pineapple make for a delicious and easy side dish to your Thanksgiving or Christmas dinner!

- Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
- Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
- Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
- Bring juice to a boil then remove from heat immediately.
- Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
- Add cranberry sauce and stir. {Gelatin mixture should be thick}.
- Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
- Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
- Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
- Top with reserved crushed pineapple just before serving.
- Store leftover gelatin in refrigerator.
