1 (18 1/4 ounce) box devil's food cake mix or 1 (18 1/4 ounce) box chocolate cake mix
1 1/3 cups water (or as called for by your cake mix directions)
1/2 cup vegetable oil (or as called for by your cake mix directions)
3 large eggs (or as called for by your cake mix directions)
2 lbs ricotta cheese
3 eggs
2 teaspoons vanilla
3/4 cup sugar
1 (3 1/2 ounce) package instant chocolate pudding mix
1 cup milk
1 (8 ounce) container Cool Whip, defrosted

Steps:

  • Preheat over to 350 degrees.
  • Prepare cake mix as directed on package with water, oil and eggs.
  • Pour batter into a greased and floured 9 x 13 inch pan.
  • Blend together Ricotta, eggs, vanilla and sugar until smooth.
  • Pour evenly over chocolate batter.
  • Bake for 1 hour.
  • Cool cake completely, but leave in pan.
  • Blend together pudding and milk (this will get very thick) and then fold in Cool Whip.
  • Spread on top of cake and chill before serving.

The other day I had a sammich similar to this for lunch. I couldn't get over how good it was! So yesterday for Valentine's Day, I decided to recreate it in my kitchen for my honey. (Hence the "love" in the name) Dan really liked it so I decided to share it with the world. If you decide to try this sammich, I BEG you, don't use the "convenience food" stuff. This is a gourmet sammich and if you do not use the fresh ingredients, you will not get the full effect of the flavors.

10 ounces focaccia bread, sliced in half lengthwise (I used roasted garlic and onion flavor)
3 ounces fresh mozzarella cheese
5 ounces very thinly sliced prosciutto
2 roma tomatoes
6 big fresh basil leaves
red wine vinegar
olive oil (the best you can afford)

Steps:

  • Take the slices of focaccia and toast them slightly in a 375 degree oven; about 5 minutes.
  • While the bread is toasting, slice your tomatoes and mozzerella, you want thin slices.
  • Remove the bread from the oven.
  • Top one side with slices of proscuitto, cheese, tomato and finally basil leaves.
  • Sprinkle a tiny bit of red wine vinegar and olive oil and the other piece of bread, on the side that will be facing towards the toppings; just a little bit, you don't want it soggy.
  • Put both slices together and with your hands (or a brush), rub a bit of olive oil on the outside of each slice.
  • Place on a hot grill for about 2 minutes on each side.
  • I used my George Foreman grill for that step and it worked FABULOUSLY!
  • Remove from the grill, wrap in foil and place in the oven (still at 375) for about 7 minutes.
  • Remove, unwrap, slice in half and enjoy.
  • Suggested sides: a really good pickle spear, olive salad, gourmet chips, a leafy green salad or whatever you enjoy with your favorite sammich.

FRIED BOLOGNA SAMMICH ITALIAN STYLE

4-6 slice(s) bologna
4-6 slice(s) sharp provolone cheese, thinly sliced
1 large tomato, thinly sliced
1 ounce(s) arugula
1 small red onion, thinly sliced
4-6 slice(s) butter bread
2-3 tablespoon(s) olive oil mayo
2 teaspoon(s) sriracha hot sauce
1 teaspoon(s) evoo
1 teaspoon(s) italian seasoning
- mesquite seasoning salt to taste

Steps:

  • in a heated large skillet, add oil and fry onions until soft. Remove from pan
  • in the same skillet, add bologna, sprinkle with italian seasoning fry until golden brown, flipping once. Remove from pan
  • add cheese and allow to melt
  • mix mayo and sriracha in a small bowl
  • toast bread on both sides in same skillet. build your sammich: spread mayo on bread,add arugula, tomato sprinkle with seasoning salt, add bologna,
