3 1/2 cups all-purpose flour, plus more for work surface
3/4 teaspoon salt
3 1/2 sticks unsalted butter, softened
1 1/4 cups sifted sugar
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Sift together flour and salt into a bowl.
  • In the bowl of a standing mixer, add the butter and mix on medium-high until fluffy and light. Add the sugar and the eggs, 1 at a time, until and mix until combined. Add vanilla and cinnamon. Reduce the speed to low and gradually add the flour to the butter, sugar, egg mixture. Mix until batter looks smooth. Place dough onto a flowered cutting board and cut the dough into quarters, flatten and wrap with the plastic. Chill in the refrigerator for 2 1/2 hours.
  • Preheat oven to 350 degrees F.

3 1/2 sticks (14 ounces) unsalted butter, at room temperature
1 1/4 cups confectioners' sugar
2 teaspoons pure vanilla extract
Decorating sugar and Royal Icing, optional

Steps:

  • Sift together the flour and salt into a large bowl.
  • Put the butter into the bowl of an electric mixer fitted with the paddle attachment, and beat on medium speed until fluffy and light, about 2 minutes. 1 teaspoon salt
6 ounces unsweetened chocolate, coarsely chopped
7 ounces bittersweet chocolate, coarsely chopped
1/2 cup unsalted butter
6 large eggs
2 3/4 cups sugar
1 1/2 teaspoons vanilla extract
2 1/2 cups chopped pecans
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper.

8 ounces unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
2 cups all-purpose flour

Steps:

  • Beat the butter, sugar, salt and vanilla together until smooth and creamy.
  • Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
  • Add the flour and mix just until incorporated.
  • Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
