Steps:
- Combine tomatoes, onions, vinegar, tomato paste, green bell peppers, red bell peppers, banana peppers, sugar, garlic, pickling salt, and black pepper in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 30 minutes. Mix cilantro into salsa.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack salsa into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 35 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Steps:
- Combine tomatillos, water, 1/4 cup diced onion, garlic, jalapeno, cumin, and oregano in a deep-sided saucepan over medium heat; bring to a simmer. Cook, turning tomatillos, until all sides are lightly browned, 2 to 3 minutes, adding more water if needed. When tomatillos are done, there should only be about 1/3 cup water left.
- Remove from the heat and pour mixture into a blender. Add salt and blend until smooth. Add cilantro and blend until well mixed. Add remaining full diced onion and pulse to combine; you want the onion to be chunky.
- Pour salsa into a serving dish. Let cool before serving, about 10 minutes.

THIN SALSA
This salsa is similar to the kind found in Mexican restaurants. It's very different from the canned type in the grocery. It's thin and flavorful. It's so easy to make, and you'll get many complements! You can change the amount of cayenne depending on how hot you like it.

Tips:
- Choose the right tomatoes: Use ripe, flavorful tomatoes for the best salsa. Roma tomatoes are a good choice because they are meaty and have fewer seeds.
- Roast your tomatoes: Roasting the tomatoes intensifies their flavor and gives the salsa a smoky, roasted flavor.
- Use fresh ingredients: The fresher the ingredients, the better the salsa will taste. Use fresh cilantro, onion, garlic, and lime juice.
- Add some heat: If you like spicy salsa, add some chopped jalapeños or serrano peppers. You can also add a pinch of cayenne pepper or chili powder.
- Don't over-process the salsa: You want the salsa to have some texture, so don't over-process it in the food processor or blender. Pulse it just until the ingredients are combined.
- Let the salsa chill: Allow the salsa to chill in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld together.
Conclusion:
With these tips in mind, you can make a delicious, chunky salsa that will be the perfect addition to your next Mexican meal. Enjoy!
